If you’ve been a vegan for at least the past 5 minutes then you know what jackfruit is. Maybe you’ve had it before or maybe you’re looking to try it. I don’t know.
I had jackfruit for the first time when I lived in Germany. The hubs and I went out for our first anniversary meal as vegans to a really nice restaurant called Grüner Michel and they served this amazing Brazilian spiced jackfruit and I fell in love with it on the spot. And then, of course, we left Germany.
Recently I was at my local Lidl and found a can of jackfruit and I thought to myself, it’s been a long time since that disastrous attempt in which I bought the wrong, sweet version so it was time to try it again.
Right?
I decided to start simple with a nacho bowl. It turned out delicious and flavorful, and I’m thinking I’ll try it again as some kind of shredded barbecue sandwiches.
What You’ll Need:
*Cutting board
*Salad spinner
*Food processor
*Mixing bowls or ramekins
Ingredients:
*Jackfruit
*Corn, cut off the cob or canned
*Black beans, drained
*Onion, chopped
*Shallot, chopped
*Garlic, diced
*Cucumber
*Lettuce
*Red bell peppers
*Cayenne pepper, cumin, oregano & smoky paprika
*Salsa

Directions:
*Drain and rinse jackfruit in cold water. If you have the time, let it soak for a few minutes to get rid of that brine-y flavor.
*Chop lettuce and rinse it in salad spinner. Spin until dry.
*Rinse & chop cucumbers, place in bowl.
*Shred/separate the jackfruit and season it with salt, black pepper, cayenne pepper, cumin, oregano and smoky paprika. Set aside.
*Chop ingredients for fresh salsa or use store bought. If you make it yourself, rough chop ingredients and add to food processor. Pulse a few times and then run until blended.
*Sauté onions and bell peppers over medium heat about 5 minutes. Add corn and garlic, cook another 3 to 5 minutes until garlic is fragrant.
*Add black beans and jackfruit, plus more seasoning. I like to add a tablespoon of tomato paste for extra flavor and add water or broth to create a thick sauce.
*Put together your nachos!
*Top with salsa and/or guac
