Happy Monday, my friends! I hope you had a magnificent weekend. I spent the weekend writing and cooking and not much else.
I know it’s a little late in the year for a cold salad recipe but I’ve been hanging on to this one because I really thought I’d end up making at least one more shredded tofu recipe so I could post a two-in-one type of thing. But, alas, I have not.
I plan to, but I haven’t. Not yet.

Shredded Tofu
If you spend any time on social media, you’ve probably seen a slew of shredded tofu recipes. I know I have and I can admit that I was intrigued. My relationship with tofu has always been a little bit complicated, but once I figured out how to cook it properly, I fell in love like so many other vegans.
The right seasoning, a little bit of marinade and a solid cook and everything is super delicious.
If you have a box shredder then you have exactly the right tool to shred your tofu properly. You can press it or dry it out if you want, but I didn’t do that. I also didn’t add any extra oil/fat because it wasn’t really necessary. If you’re not into oil free vegan cooking, add a little while you let those flavors soak into the tofu.
Other Salad Stuff
There’s not big mystery to make a really good vegan salad recipe. Grab some type of greens, whether it’s lettuce, spinach or even cabbage, and toss in the things you love like carrots, apple, scallions, and bell peppers.
It’s not a puzzle, it’s a healthy, colorful, vegan salad. Simple as that.

Vegan Salad Dressing
The vegan salad dressing for this shredded tofu salad is peanut butter based with rice vinegar, lime juice, hot sauce and hot water. You can add other stuff if you want, but I don’t think you really need to.
Keep it simple and keep it healthy.
This is a simple and delicious healthy vegan salad recipe, and most of all, stress-free. If I use something you don’t like, switch it up. Make it your own.
