Hey there!
Maybe I’m gonna show my age here, but do y’all remember how in the 90s there was a mild cucumber & watermelon craze? It started with Bath & Body Works and then every single company that made body wash, lotion, body spray, face cream, and body scrub came up with their own cucumber & watermelon scented (and flavored) everything.
No, just me?
Okay then.
Well last week was a week of salads from around the world and one of them was this watermelon and cucumber salad and it made me think if of that because, yeah, watermelon & cucumber was my flavor long before (and after) it was in fashion.
Anyway, on to the salad!
Chill the Watermelon
This is the key to this easy vegan summer salad. Dice the watermelon and put it in a bowl and refrigerate it for at least 30 minutes. You don’t need to salt it right away, save that for just before plating, but get it nice and chilled or else it kind of defeats the purpose of this being a really nice way to cool down while nourishing you and your family.

Pickle or Ice Bath?
The recipe I used called for a diced red onion and advised that I place the onion in an ice cold bath to reduce the intensity of the onion flavor, but I didn’t do that because…I used shallots and they are generally much milder.
But, unfortunately they were still very…pungent. They could’ve stood either an ice bath or a quick pickling. Try either one is my opinion because it almost overpowered all the other flavors in this delicious vegan salad.
Okay, let’s make this bad boy!
Kitchen Tools:
Cutting board
Chef’s knife
Large bowl
Ingredients:
Watermelon
Cucumber
Shallots
Mint (fresh)
Feta (optional)
Salt
Paprika (I mixed smoked & sweet)
Lime juice

Instructions:
*Dice cucumber and watermelon into bite-sized pieces.
*Chill the watermelon, but you could also chill the cucumber too if you wanted.
*Place the shallots in an ice bath or pickle them and set aside until you’re ready to put the salad together.
*Chop or tear the fresh mint and place in a large mixing/salad bowl.
*Chop or crumble your vegan feta cheese if you choose to use it.
*Place everything into the large mixing bowl and add salt. Toss to coat.
*Top with Tajin (if you have it) or paprika, chili flakes, lime zest and lime juice.
Serve.
**I ate this salad as it was, with a side of oven roasted TVP, keeping it simple.**
