You don’t have to use smoked tofu, in fact you can use any vegan meat alternative you choose. But I was browsing online and came across a non-vegan dish that was very similar to this and jogged a few nostalgic memories and I knew I would make a vegan version, especially since I was looking for a new vegan recipe to use with the fresh cranberries. Gotta make the most of them while they’re in season, right?
Take some time to find a sandwich bread of your choice, because bread is very important when it comes to making a proper vegan sandwich.

Make Your Vegan Sandwich
To start, let’s focus on the smoked tofu. Tofu is a great plant-based vegan protein option and can be flavored in a variety of ways. To give it a smoky flavor, you can either purchase pre-smoked tofu like I did, or make it at home.
If you want to make it at home, you can use a stovetop or an outdoor grill. Simply slice the tofu into thin slices and brush with a mixture of soy sauce, liquid smoke, and your choice of spices (such as smoked and spicy paprika, garlic powder, and cumin).
Grill or pan-fry the tofu until it is browned and has a smoky flavor.
Next, let’s move on to the vegan cheese. There are many store-bought options available so spend some time browsing the vegan cheese options at your local markets. The choices are getting better each season it seems and for this particular sandwich I decided to go with vegan Gouda. If I could have found vegan Brie then I would most definitely have chosen that so if you find any near you, I’d love to see photos!
The choice is yours but I warmed the bread up for a couple minutes and then added the cheese to get it all delicious and melty!
Now, let’s talk about the homemade cranberry sauce. This sweet and tangy sauce is the perfect addition to the sandwich and adds a pop of color and flavor. To make it, you will need:
fresh (or frozen) cranberries brown sugar, cinnamon stick, the juice & zest of 1 orange water, and your choice of spices (such as ginger, red wine or cloves).
Combine the all the ingredients in a saucepan and bring to a boil. Reduce the heat and let the mixture simmer until the cranberries have burst and the sauce has thickened. Add in your choice of spices and let the sauce cool before adding it to the sandwich.
To assemble the sandwich: toast your bread of choice and layer on the smoked tofu, vegan cheese, and homemade cranberry sauce. You can also add in additional toppings of your choice, such as lettuce, tomato, or avocado. Serve the sandwich warm and enjoy!
