Easy Vegan Banana Cobbler

Happy Monday, food lovers! Who’s ready for an easy dessert?

That’s one of the thing about desserts, isn’t it? You want to make desserts at home so you can control the sugar and the fat, so you can be your own quality control on the ingredients, but you also don’t want spend a lot of time on something that might end up tasting horrible. Right?

Well, this vegan dessert recipe is easy and you probably have all the ingredients on hand already.

Let me start with a little honesty. My love for bananas has limits. Banana bread? Yes. Banana cupcakes? Absolutely. Banana cookies? Bring them on. But warm bananas on their own? Eh. Not really my thing.

My hubs, on the other hand, is a total banana superfan. So when I spotted a banana cobbler recipe on social media, I knew right away he’d love it, so I veganized it and made it. Mostly for him, because that’s love, people!!

One of the Easiest Vegan Desserts Ever

Seriously, this might be one of the easiest vegan desserts I’ve ever made. You toss sliced bananas with a little brown sugar, cinnamon, lemon juice and cornstarch, let them sit while you mix up a quick topping, spread it over and bake. That’s it.

No mixer, no fancy steps, no stress.

The oats in the topping give it a nice bit of texture, so you get soft, jammy bananas on the bottom and a golden, slightly chewy top. Cozy dessert perfection.

Sick of Banana Bread?

Of course you’re not. No sane person is ever sick of banana bread. It’s moist, sweet and delicious, not to mention its the perfect way to use up ingredients rather than toss them in the trash. I mean, really, you could consider banana bread a waste free recipe. Just sayin’.

BUT if for some reason you are sick of making banana bread (no judgment…okay, some judgment), this is a great way to use them also.

And here’s the best part: because the bananas get cooked, you don’t have to wait for them to turn brown and overripe. Regular yellow bananas work just fine. No more staring at the fruit bowl waiting for those spots to show up!

Also, eat your dang bananas, they’re good for you.

Go Easy on the Sugar

I took it easy on the sugar in this one, and honestly, the bananas bring plenty of natural sweetness on their own. But if you like your desserts on the sweeter side, feel free to add more. You do you.

The Verdict

It was delicious! Hubs loved it and has already requested it again, so you know it’s a keeper.

As for me? I thought it was good… as far as warm bananas go. And I’ll probably make it again. For him. And maybe for my in-laws.

Easy Vegan Banana Cobbler

An easy vegan banana cobbler with warm cinnamon bananas under a golden oat topping. Lower in sugar and a great way to use up bananas, no overripe ones required.
Prep Time 15 minutes
Cook Time 25 minutes
Total Time 40 minutes

Ingredients

For the bananas
  • 450 g bananas sliced (about 4 medium)
  • 55 g brown sugar
  • 8 g ground cinnamon
  • 8 g cornflour (cornstarch)
  • 12 g lemon juice
For the topping
  • 115 g all-purpose flour
  • 1 tsp baking powder
  • 85 g granulated sugar add more if you like it sweeter
  • 30 g rolled oats
  • 50 g vegan butter plus a little to grease the dish
  • 100 ml unsweetened almond milk

Method

  1. Preheat the oven to 180C / 350F and butter a 20×20 cm (8×8 inch) baking dish.
  2. Slice the bananas and toss them with the brown sugar, cinnamon, cornflour and lemon juice. Let them sit while you make the topping.
  3. In a mixing bowl, combine the flour, baking powder, sugar and oats. Add the vegan butter and almond milk and mix until combined.
  4. Spread the bananas in the baking dish and cover them with the topping.
  5. Bake for 20 to 25 minutes, until the top is golden and the bananas are bubbly underneath.
  6. Let it cool for a few minutes, then serve warm.

Notes

We portion this by weight at home, about 100 g per serving. No need to wait for overripe bananas, since they soften as they bake. Go easy on the sugar or add more to taste.

Enjoy!
