Broccoli Ramen & Tofu 2 ways

Howdy!! I hope this week is treating you well.

Do you have a go-to meal that you have when you’re out of ideas or when you just want something delicious and familiar?

I do and it usually starts with Ramen noodles and broccoli. That’s a good base, right? Sometimes I’ll add ginger, garlic and crumbled tofu, others I’ll add onions, carrots and celery for Lo Mein stye vegan noodle dish.

It’s an easy vegan meal that I can make on auto-pilot and know that it will always taste good, but also it’s such a versatile base that can turn into so many dishes.

I don’t eat noodles often, they’re like a treat for me and when I do get a chance to make them, I like to experiment. Sometimes I’ll add TVP and cashews for a cashew chicken style vegan noodle recipe.

The Brocc

When it comes to the broccoli in this dish, I like to keep it fairly simple. I usually boil the broccoli and toss it in the sauce later, or slather it in herbs & spices and bake it in the oven for 20 minutes or so.

You could also use the air fryer if you want to, and actually I think I’ll do that next time.

Plans, Delayed

Anyway, I was really busy but I had this whole plan to taste test two different brands of tofu and then the day came and I was busy and got started later than I planned…but I was determined.

I had two packages of firm tofu made from different brands and I wanted to see if there was a noticeable difference. To do that, I had to have them together, at least that’s what I told myself.

So I whipped up a sweet & spicy soy sauce based glaze for both and decided that I’d just cut them into different shapes so we could have an objective test. Ridiculous, I know, but this is often the life of a writer.

When it comes to go-to vegan recipes like this is that you don’t need to be so rigid about it. I rarely have a recipe going in, just a few ingredients that I want to use and I just put them into Cronometer as I go along and track it that way.
