So I had this idea about toast. You know how everyone’s always talking about avocado toast? Okay, not everyone and not really anyone, but the idea of avocado toast got me to thinking about ways I could have it but without the avocado.
That’s right, I’m that one person you know who doesn’t like avocado. 😛
So I had this idea of using tofu because, why not?

The goal wasn’t to recreate the taste or texture of avocado toast, but to find an alternative for an easy vegan meal that makes good use of bread. And the idea was born.
Ingredients
Initially I had the ingredients nailed down to silken tofu, nutritional yeast, salt & pepper and lemon zest/juice. But that felt incomplete so I thought, what about edamame?
I set my frozen edamame beans in warm water for about 5 minutes and they were good to go.
And then I thought about roasted garlic, because honestly, is there anything not made better by roasted garlic? Actually yes, 30 grams of roasted garlic is too much. It was tasty but holy hell we both had garlic mouth for the rest of the day!
Still good though, but maybe start with 20 grams of garlic for 200 grams of silken tofu.

Bread. Grab whatever you like. I bought a loaf that could be sliced. It was like a ciabatta only not quite as dense and it had a soft top so I didn’t slice the roof of my mouth, which is very important to me.
Food Processor or Blender
The best thing about this vegan edamame toast is how easy it is to make. The oven or stovetop does the work of cooking the garlic and edamame and warming the bread so all you have to do is whip up the sauce.
Put everything in a blender and run until smooth. Add some lemon juice or water if you need liquid, but add it about 15 to 20 grams at a time.

Spread on your bread and you’re good to go.
My only complaint? It was a little too drippy. Next time I’d do 100 grams of firm tofu and 100 grams of silken tofu. Or maybe add another handful of edamame to thicken it up a bit.
Now that I think about it, this would probably be a really good dip with bread or fresh vegetable sticks.
