Things are busy here, but I’m working hard and trying to get out into the sunshine as much as I possibly can without letting my work suffer. One of the ways I’m doing that is by keeping my meals simple yet delicious when I can.
Some days I’m in the writing cave all day aside from workouts and bathroom breaks, which means I really have to make sure to have a plan for meals. I mean, I always have a plan because I do an outline of the meals I want to make each week, but some require more prep work than others so if I don’t think about it before the meal slaps me in the face, it’s not gonna happen.

But I have a hack for that! It’s a super simple, easy to make, healthy and delicious vegan dinner recipe.
Where to Start?
Easy. Start with a vegan protein because often times that’s where the time needs to be put in. Whether it’s dry beans needing to go into a slow cooker or TVP needing to be re-hydrated, those things require advance work.
If you’re using something like vegan burgers or chicken, you have a lot more options at the last minute.
For this particular vegan dinner recipe, I started with…tofu. I know, big shock, right?
BUT, I came across this new tofu at Lidl and it’s good on calories, fat and other nutrients and the price was right so you know I had to give it try.

Next, Veggies!
Once you’ve picked out a vegan protein, it’s time to figure out what veggies to use. I recommend picking two vegetables that you can cook together either on the stove, in the oven or even in the air fryer. For this meal I chose two hearty ones: cauliflower & broccoli.
These high fiber babies are delicious and they take on flavor really well so you can make any flavor profile you want. I chose these because I just love them both and because they looked so gorgeous at the grocery store that I really had no choice.
And now all that’s left is to cook it up and get it on plate…or in a bowl!
Kitchen Tools:
Cutting board
Kitchen knife
Silicon baking mats
Ingredients:
Tofu
Cauliflower
Broccoli
Salt & black pepper

Instructions:
*Start with the tofu. Cut it however you want, I chose to cut it into cubes because they cook fast and get crispy on all sides. Season with herbs & spices of your choice. I used lemon zest, garlic granules, sweet paprika and oregano. Add a splash of soy sauce and toss. Set aside.
*Chop your veggies. I chopped (and weighed) the broccoli and cauliflower, seasoned and laid the pieces out in one layer on a silicon baking sheet.

*Pre-heat oven to about 200C/400F. Add tray of veggies and cook for 12 minutes and then stir. Add tray with tofu on it and cook another 10 minutes. Check for doneness and add more time as needed.
*Plate it up and get ready to fill your belly!
That’s super easy, right? A great way for anyone to get lots of nutrients, belly-filling fiber, and without a whole lot of work.
