Vegan Sandwich Recipes! ~ Philly Style Mushroom Sub Sandwich

Happy 2024!!!!

I know it seems like I’ve been on a mushroom kick lately but the truth is that it isn’t just lately. I’m really proud of the photos that I snapped for this recipe and so I chose to post it on this first day of 2024.

Why?

There are plenty of reasons but we can start with my love of pretty much every type of mushroom I have ever tried. They’re delicious and versatile which means they are a really great vegan meat substitute. You can sauté them, bake’em, fry’em, airfry’em or deep fry them if that’s your jam.

Did I mention that they are also low in calories? 100 grams of mushrooms will run you about 30 calories, give or take a few depending on the variety.

And then there’s the fact that so many of you might be hungover or simply too tired from ringing in the new year to prepare a proper meal. With this recipe, the oven does most of the work so you can sit back and relax, and let the wonderful smells waft throughout the house. That’s right you can pop the onions and bell peppers in the oven about halfway through the mushrooms cook time–seasoned, of course–and pop the bread in during the last 2 or 3 minutes of cooking and there you have it, a delicious vegan sandwich for a New Year’s lunch or dinner.

All right, let’s do this Philly cheesesteak style vegan sandwich!

Kitchen Tools:

*Cutting board
*Kitchen knife
*Baking mat
*Spray bottle

Make Every Bite Count & Count Every Bite

Ingredients:

*Mushrooms
*Onion
*Bell peppers
*Crusty bread
*Balsamic vinegar
*Oregano
*Salt & pepper

Instructions:

*Preheat the oven to 190C375F

*Clean and slice your mushrooms, weigh them if that’s something you do.

*Toss with salt, black pepper, balsamic vinegar, oregano, paprika and any other herbs & spices you enjoy. Lay on baking mat, try to make sure they aren’t overlapping. Bake 25 minutes, turning every 10 to 15 minutes for even cooking.

*Slice onions and bell peppers, season in a large mixing bowl and set aside.

*Add to oven and cook about 15 minutes or until they’re soft but still have a little bit of a bite.

*Slice your bread and pop it in the oven for 2 to 3 minutes to crisp it up. If you’re adding vegan cheese, I recommend adding it to the bread after the first 90 seconds for an additional 90 seconds. Just enough to start melting because the hot mushrooms-peppers-onion mixture will keep it warm and melty.

*I found this new vegan food product! It’s vegan cheese called Mr Plantel and it’s very delicious and it has a good meltability if you’re into that. I don’t care either way but when I have things like this, it’s nice to have that gooey vegan cheese-y goodness.

*Assemble your sandwich.

**You can also add a clove or two of minced garlic to the mushrooms for extra flavor.
**If you go for some kind of liquid vegan cheese, you’ll probably want to layer that on top in the traditional Philly sandwich style.
