Vegan Summer Salads ~ Strawberry & Vegan Feta Salad

Happy Monday, friends, readers & foodies! Did you have a good weekend?

My weekend was nice and relaxing. Mostly, I wrote, but the Hubs and I went for a long walk around the city, about 10km. It was really nice. It was sunny and warm, and when we got home we were both in need of either espresso or a nap…possibly both!

One of my favorite vegan meals when it’s hot & sunny outside is a salad. I don’t care what you put in it–as long as its not beets or avocado–just make it fresh & crunchy and I’m in!

When it comes to grocery shopping, I am a planner. I have to be or else things might spiral out of control. I start with an idea of what I want and I get the ingredients for those meals, but if I’m not feeling something then I’ll use what I have and improvise.

But the strawberries have been looking mighty fine this year. Red and plump and oh, so enticing, so you know I had to get some. And let me tell ya, this girl has zero regrets about it. Growing up in the US, you kind of get used to fruit not tasting the way you remember it tasting, right? Is that just a me thing?

Anyway, it happens often when it comes to produce. Last year, blueberries were amazing and so far this season, they’ve been a little too tart or lackluster. But strawberries? They have been quite amazing, plump and juicy and packed with so much flavor I really can’t get enough.

Except you can get enough if you’re not creative. Right? Again, is it just me?

Once I had those strawberries in my cart, I knew I had to figure out how to use them, and quick, because strawberries also have a laughably short shelf life. Next came the mint and once I had the mint, I knew there was just one thing missing. Vegan feta cheese!

Yep, and the salad was born.

Fruit & Feta

Honestly I was never a fan of fruit and feta. I love watermelon and I love feta, but the idea of putting them together? No thank you. But I’m slowly coming around and this new vegan summer salad proves it.

Strawberries and feta are actually a pretty good pairing and the mint brings it all together nicely. Add a splash of balsamic vinegar and you’re good to go!

This vegan salad recipe is easy to make, delicious and works well as a main dish or a side dish.

Kitchen Tools:

Cutting board
Kitchen knife
Scale
Mixing bowl

Ingredients

Strawberries (chopped)
Mint (torn or sliced)
Vegan feta cheese (cubed)
Balsamic vinegar

Instructions

*Rinse strawberries and chop, place inside your mixing/salad bowl

*Tear or chop the mint and place on top of the strawberries.

*Cut the vegan feta into cubes or crumbles, depending on your cheese. The brand I used here, Mr. Plantel, is tasty but it’s not really crumbly, which is why I diced it.

*Drizzle with balsamic vinegar and toss until everything is coated and blended.
