Spicy Tuna Bowl for Vegans!

Have I mentioned how much I love to experiment with new vegan food products? They can be hit or miss, but when they hit, they hit BIG.

And today I have a quick and healthy vegan recipe that uses vegan tuna from Vantastic Foods that I think you’ll find easy to make and delicious to eat.

It’s another Buddha Bowl recipe, technically but there are plenty of fresh veggies that could easily slide this into the vegan salad category. If you enjoy bowls, consider this vegan sushi bowl! Call it what you want, just call it tasty.

Don’t worry, this is an easy vegan recipe that only requires basic knife skills.

The only cooked elements in this dish are the bulgur and the vegan tuna, so I’d recommend starting there.

For the tuna, sauté onion for about 5 minutes and then add vegan tuna and cook another 2 minutes. Add diced tomato, vegan soy sauce or (vegan tamari if you don’t have it) and vegan Worcestershire with a bit of sambal. Stir until thick and sizzling. Add water or waste free broth and bring to a boil, then simmer until thick.

Note: It’s listed as tofu in the ingredients list because many vegan brands are not programmed into Cronometer.

Chop the rest of the veggies as you see fit, just try to make them uniform so you don’t end up wearing more food than you eat. Arrange it on a nice bed of bulgur, or your favorite grain, and have at it. This is the perfect way to enjoy something you love, spicy vegan tuna, and make it healthy with loads of fresh vegetables.

Drizzle with a Sriracha & lime blend and there you have it, a quick and easy vegan lunch.
