Okay, let’s move on to something not book related…vegan food.
Before you roll your eyes because omg not another vegan salad recipe!, hear me out. This is yet another vegan salad recipe but it’s heartier and perfect for warm or cold weather. It’s filled with tons of good stuff that tastes good and is good for your body.

Well then let’s keep going. This vegan salad is exactly what it sounds like, a bowl of goodness. It has all the things you love about a good antipasti, vegan Greek cheese, artichoke hearts, sundried tomatoes and kalamata olives just to name a few. This is an easy vegan recipe that goes great for lunch or dinner, and with a few quick changes you can tweak with a few ingredient substitutes.

Another great thing about this recipe? You don’t have to be committed to eating healthy to love it. It’s satisfying and fresh, and did I mention it’s super yummy?
Good, then let’s get to it!
Kitchen Tools:
*Cutting board
*Kitchen knife
*Large mixing bowl
*Sauce pan
*Salad tongs
Ingredients:
*Barley
*Water/waste free broth
*Scallions
*Lettuce
*Cucumber
*Sundried tomatoes
*Vegan Feta (Greek, Mr Plantel for me)
*Fresh dill & basil
*Artichoke hearts
*Vegan sausage or salami
*Edamame beans, shelled
*Lemon juice
*Spanish olives
*Kalamata olives

Directions:
*Cook the barley according to package instructions. Remove from heat and slightly uncover so it can cool.
*Boil edamame for 5 minutes in salted water
*Chop and rinse lettuce, be sure to dry it before adding to mixing bowl

*Slice scallions & sundried tomatoes, and add to mixing bowl.
*Chop or dice cucumber, sausage and vegan Greek cheese, and toss into mixing bowl.
*Halve olives
*Chop dill and parsley.
*Toss everything into the large mixing bowl, adding the barley when it has cooled enough that it is no longer steaming and then add to mixing bowl.

*Mix everything together, seasoning with salt & black pepper and lemon juice.
*Serve up a big bowl and enjoy!
