If you’ve been here for more than five minutes, you know about my weight loss journey and my efforts to re-learn how to eat properly, track calories and all that jazz. If not, I pretty much just summed it up for ya!
The point?
Well the point is that I rarely do these type of vegan food recipes because I work hard to make things I like as healthy and as calorie friendly as I can. I make a lot of oil-free vegan recipes and keep sugar to an absolute minimum, which has been working out great, thank you very much!
But sometimes my partner in life and crime has a hankering for some of his favorite dishes, a few of which include cheese. Yes, he loved cheese in our pre-vegan days and unlike me he still loves vegan cheese. Recently we bought gnocchi because–yum–and because there were no traces of milk powder, egg or any other milk protein in the ingredients which pretty much meant it was gnocchi time!
Instead of a vegan gnocchi dessert recipe I found on Instagram, he chose to use second half of the package to satisfy his need for vegan feta cheese by taking the block of vegan Greek block and turning it into a delicious vegan sauce. It was so yummy y’all!!!

I didn’t just eat every last drop but I also used my finger (judge all you want) to get ALL the sauce. It was that good.
And the best part of all? It’s easy to make, at least according to him.
Kitchen Tools:
*Potato masher
*Silicon whisk
*Small mixing bowl
Ingredients:
*Vegan Feta cheese (I used Mr. Plantel brand)
*Ground turmeric (optional for color & smokiness)
*Cornstarch
*Nutritional Yeast
*Water or waste free broth
Instructions:
*Remove the vegan feta cheese from the packaging and mash it with the potato masher until you have small crumbles. If you have a brand of vegan feta that crumbles manually, have at it.

*Add the vegan cheese and a few tablespoons of broth or water to a saucepan over medium heat. Whisk the mixture until the cheese starts to melt but take your time because you don’t want to burn it.
*Once melted, the mixture will be rather thin so if you want to thicken it you can use a cornstarch-water slurry to achieve this. Add the slurry and bring it to a boil, then reduce to a simmer.
*While simmering add in turmeric and nutritional yeast, smoky paprika and anything else you want to flavor this creamy feta sauce.
*Drizzle over your favorite food or add it straight to the pot and stir until covered.

How To Use It?
*Use it on gnocchi or any pasta you love for a quick and easy feta mac & cheese or feta alfredo sauce.
*Drizzle over oven roasted potatoes.
*Dip your toast in it.
*Serve it on top of chickpeas & rice.
*Use it it to make a white lasagna.
*Add beer to the sauce for a beer cheese sauce!
