One of the best things about cold weather is that you get to eat tons and tons of soup! It also means that I get to break out my slow cooker but this is not a slow cooker recipe. In fact, I would call today’s vegan soup recipe a sheet pan soup if that makes sense?
This is going to be a quick post because I am totally in the zone with Indigo’s story, which is book 2 in the Green St. Girls series if you’re interested. Shameless plug, I know!
Anyway I digress, this creamy vegan sheet pan soup is healthy and delicious but it is also super easy to make. I know I say that often, but I promise this is one of those do it and forget about it until later vegan recipes.
Grab your sheet pan and your fresh herbs and let’s get this vegan soup recipe started!
What You’ll Need:
*Sheet pan
*Parchment paper or Silicon baking pads
*Immersion blender or Blender
*Soup pot
*Oil dispenser
*Vegetable scrubber
Ingredients:
*Carrots
*Fennel
*Onion
*Garlic
*Fresh rosemary
*Fresh thyme
*Sunflower oil
*Broth (or plant milk or cream if you want it creamier)

Directions:
*Rinse & scrub carrots. I used the carrots with the greens attached (for my chimichurri recipe here so they didn’t absolutely need to be peeled and I didn’t peel them, but that’s up to you.
*Chop a medium to large onion into quarters
*Chop fennel bulb in half, removing core and chopping into uniform pieces so everything cooks at the same time.
*Slice the top off a head of garlic, drizzle with olive oil and wrap in a small piece of aluminum foil.
*Roast on 200C/400F for 20 to 30 minutes, checking at the halfway mark to see how the veggies are coming along.
*When the veggies are cool, add to a blender and run until smooth, OR you can add it straight to the soup pot with the liquid and use an immersion blender.
The result is a super creamy soup that feels like a bisque without the extra fat. And you see how easy that was, a little bit of prep and your kitchen tools did most of the heavy lifting.
Serve with bread or crackers or nothing at all!
