Garlic Cauliflower Sauce

Good Monday, fellow vegan foodies!!

How are you? I am…cold and I couldn’t play tennis today, which is a bummer but I’m hoping that means I’ll get more words written today.

As you’ve probably guessed about me, I’m kind of an experimenter when I have time, which isn’t often but sometimes you just get that wild hare up your butt and you need to do something different. That’s what happened to me recently.

There was a very large, very beautiful cauliflower and I felt compelled to get it even though I had no plans for during the upcoming week. So when the time came, I decided to do a riff on a vegan cauliflower carbonara. I wanted something silky smooth and full of flavor so I stuck with that idea.

But then we had a couple of Beyond sausages in the fridge and a fresh loaf of bread–because btw, Romania has tons of amazing bakeries and each one makes different types of bread–and I knew what this would be; one of ‘famous’ sauce dishes.

Okay, not famous but popularized by me…in our home.

This is an easy vegan recipe that is quite customizable and guaranteed to satisfy any vegan appetite.

Kitchen Tools:

*Blender or Immersion blender
*Baking mats
*Cutting board

Ingredients:

*Cauliflower
*Onion
*Garlic
*Vegan sausages (optional)
*Turmeric
*Salt & pepper
*Whole wheat bread (optional)
*Paprika & cumin

Instructions:

*Chop broccoli into florets so they cook evenly. You can boil them for 7 to 9 minutes on the stove, or bake them in the oven for 20 to 25 minutes.

*Cut onion in half or in quarters and add to the cauliflower (if baking) during the last 15 minutes of cooking.

*Slice top off a head of garlic and bake 15 to 20 minutes.

*When garlic, onion and cauliflower are cool, add to blender and run until smooth. An immersion blender will also do the job but I found it much smoother using the blender. You might need to add water or broth to get it thinner, but keep it thick because you want it to cling to the bread.

How To Serve

My favorite way to enjoy this kind of dish is with bread and protein. You could even toss in chickpeas or butter beans into the blender with the cauliflower. Or soaked nuts.

Another good use of this delicious vegan sauce? Pasta. Toss this thick & creamy sauce with your favorite sauce.

Add curry and potatoes, for a quick vegan curry dish…and reserve some of the whole cauliflower florets.

Toss with a grain and just add a vegan protein and you’re good to go!

The point is that you can do so much with one simple sauce. Add a few chili peppers and spice it up.
