Vegan Cabbage & Bean Veggie Stew

So, here we are again on yet another Monday to talk about one of my favorite things; food. Specifically, vegan food. But first, how was your weekend? Did you do anything fun?

I did! Here in Ploiesti it’s holiday-mania time! I’m not religious and the Hubs and I don’t really do gift giving but ever since living in Germany there is something I really enjoy about this time of year. Christmas Markets! There are always tons of little booths where you can buy everything from handmade belts and hats and jewelry to Mulled Wine (gluhwein in German & vin fiert in Romanian). It’s always crowded, which I don’t love, but it’s a great way to get out of the house, see the lights and just have a good time, which is exactly what we did on Friday night.

There was a drone show, a Ferris wheel and lights everywhere!

It was cold, only about 5° Celsius so when we came home you know what was waiting for us…vegan stew!!!

Isn’t that the best part of outdoor winter activities, coming home to a bowl (or mug) of something warm. Cos was in the mood for Țuică, a Romania spirit that you can drink room temperature or on the rocks, but in the winter you grab a few pepper corns and a sweetener and heat it up! It’s sweet and strong and super delicious.

But enough about that, on to the stew!

Kitchen Tools:

*Large pot
*Cutting board
*Kitchen knife
*Ladle
*Wooden spoon (for stirring)
*Kitchen scale

Ingredients:

*Butter beans
*Carrots
*Onion
*Celery
*Green cabbage
*Garlic
*Spinach, frozen
*Leeks
*Fresh or dried herbs (oregano, marjoram, rosemary & thyme)
*Vegan sausage (optional)
*Vegetable broth or water

Instructions:

*Chop (and weigh) your veggies.

*Add all the vegetables except cabbage, spinach and garlic to the stock pot over medium high heat. I used my waste free broth but you can use oil if that’s how you cook. Add salt & pepper and stir about 3 to 5 minutes.

*Add garlic and cook another 3 minutes.

*Add cabbage in a few batches, adding more when the previous batch starts to break down. Once it’s all slightly cooked, add the spinach and broth or water.

*Season with salt and pepper, herbs and any other spices you want. Bring to a boil and then reduce to a simmer.

*Let simmer for 10 minutes before you add the chopped vegan sausage and cook another 5 to 10 minutes.

Serve with bread or crackers or nothing at all!

Can’t have a holiday market without Vin Fiert!!!!

    OMG, you are the cutest!!!! I love your jacket!

    We had a weekend of winter festivities in the freezing cold too. I had to cover an Winter Wonderland event, but it was so beautiful and magical.

      Thanks! The coat is getting a little big and I love it so much that I’m reluctant to get rid of it. By next winter it’ll be entirely too big so I’m going to enjoy it for the rest of winter! If it weren’t for winter festivals I might never leave the house in winter!
