You saw the title so you know that there is always time for a salad. Many people in my life enjoy giving me a hard time about eating nothing but rabbit food but the honest truth is that they don’t know what they’re missing out on.
Since I’ve gone vegan and lost weight there are always a few different responses, including:
You lost weight because you don’t like eating healthy.
You’re starving yourself
That salad looks good, where’s the rest of the meal?

Those are just a few of the comments I put up with on a regular basis and at first it used to bother me, but now? Now I smile to myself because I know a truth they refuse to acknowledge. Nothing is as delicious as a big vegan salad for lunch or dinner. Or as nutritious. Or as satisfying with an obscenely small amount of calories. That means I can indulge, enjoy and have a bigger meal later without worrying or fussing about it.
I am an unabashed lover of salad and there’s nothing anyone can say to change it, but I’m all for letting them try.
