Vegan Focaccia Pesto Pizza

Happy Hump Day, food friends!

You know how it’s been hot out? And how it’s summer and most of us would rather be outside–even when it’s hot as balls–rather than in the kitchen? No, just me?

Okay fine, I admit to a bit of cabin fever recently. I’m ready for another trip to break up the computer time even though I absolutely love my job(s) as a ghostwriter, author and blogger and I wouldn’t trade it for the world but when there’s nothing interesting going on I have a tendency to have an uneven work-life balance. When that happens, I stare out of my office (i.e. living room) windows and wish to be outside even as the temperature creeps up into the 40s (Celsius).

Okay tangent over.

I haven’t been feeling very creative…okay that’s not true. I’m always feeling creative but when it’s this hot I am all about sandwiches, oven roasted everything or air fryer meals. And that, fellow vegan foodies, brings me to this quick and easy vegan pizza recipe.

I was in Lidl the other day and it was “Italian week” which just means they have a lot of brands that specialize in certain cuisines. During “Italian week” you can find pre-made tiramisu, Italian cheeses, gnocchi, fresh ravioli and the like. I’ve always enjoyed these weeks and it started back when I lived in Germany. My particular favorites are French, Spanish and of course American, which sadly doesn’t have enough vegan options for my house.

But what they did have that I’ve never seen before? Pre-made focaccia dough. I love focaccia and I don’t eat it often because, well have you seen the amount of oil people put on focaccia bread? It was a worry but I had to try it since Italians love olive oil over butter which meant it was an accidental vegan food product. And that’s how we arrived here.

I knew when I bought it that I would make a focaccia pizza because it’s something I don’t have very often because pizza dough is crazy high in calories but it’s not all that satisfying. I know, I know, I’m all boring and I’m fine with that because I ate plenty (read: too much) pizza in my fat and pre-vegan days. But this day also happened to be the day the Hubs and I played tennis and burned a metric buttload of calories.

Yay!

Anyway this is a quick and easy vegan pizza, but as always you can put on it whatever you want.

My goal here was to use as few cooked ingredients as possible so that I could pop this bad boy in the oven and then run from the kitchen like my slippers were on fire. Spoiler alert: mission accomplished!

If you love vegan pizza and simple vegan cooking, you’ll probably think I’m pretty much a vegan genius.

Gather Your Ingredients:

*Focaccia dough
*Sun dried tomatoes
*Vegan Greek block
*Wild Green goddess pesto (recipe coming soon)
*Vegan mince

Make Every Bite Count & Count Every Bite

Kitchen Tools:

*Kitchen scale
*Knife
*Cutting board
*Baking sheet or Pizza stone

Instructions:

*My focaccia dough didn’t need to be pre-cooked so I spread it out over a baking sheet and loaded it up with my ingredients starting with my Wild Green Goddess pesto

*Next simply layer the other ingredients, spreading them out so you don’t have a heavy pizza that bends when you pick it up to take a bite.

*Pop it in the oven for about 12 to 15 minutes, or whatever the package instructions indicate.

*Cool, cut and munch-munch.

Sure, it does require some work but you don’t need to cook anything until the whole dang pizza goes into the oven.

Is it healthy? Unfortunately no. But it is easy to make and sometimes that counts for a lot.

    I can’t tell you how good this sounds, I don’t eat or make focaccia often but the next time I do I’ll definitely try this recipe.

    Ah, so the heat wave is happening all over the world, not just the USA?! It’s really been a crazy summer, especially when I have to cover events outside. This week I’ve been staying in all day and just going out to events at night, which was such a blessing. (And I’ve been doing the no-bake vegan dessert thing so I don’t have to use the oven!)

    Enjoy the pizza!! I love the idea of putting pesto on it — yum!!
