Yeah, you heard that right. Veggie Platter Dinners.
It’s not as gluttonous as it sounds, I promise. It’s just a variety of vegetables–mostly vegetables, in fact–so you’re getting tons of colors and textures and flavors on one plate. This is an easy vegan meal that’s easy to mix & match based on what’s in season, what’s on sale and what you like.

*Low in calories
*Packed with nutrients
*Mostly whole food & plant based

What You Need:
These are very similar to vegan Buddha bowls or Harvest bowls, but instead of a grain you use beans as the base of the meal and build around it. So basically what you need is veggies and beans, and if you want you can add a vegan meat alternative. I used a couple of vegan sausages made of pea protein in this one because I had the room for the calories and I actually LOVE these things.
They remind me of eating sausage links with my granny.

Cooking:
You can cook the vegetables in the oven or on top of the stove, or both. Just make sure you start with the vegetables that have the longest cooking time and work your way backwards. You can even use the air fryer or whatever other new tech cookery is available.

If you want, you can also add a sauce or dressing for drizzling or dipping. Grab your favorite vegan yogurt, mix it with mustard or fresh herbs, something spicy and that’s it! Dip away.

I’ve been busier than usual lately and this is the perfect chop, weigh and pop it in the oven until it’s done type of meal for those busy nights. Chopping and weighing is the perfect break from the screen so that I can get back to it when I’m done…it’s called work-life balance y’all!!
