Today I have a recipe from my Hubs and it is a delicious, comfort food, vegan junk food recipe that is guaranteed to fill your belly, put a smile on your face and keep you coming back for more.
As you all know, I am still on a journey to get to my goal weight which means that most times I will choose a vegan meal that’s calorie and nutrient friendly over something that’s high calorie and full of comfort. Not that I don’t want these foods, because I do. I mean, I didn’t get to be fat because I’m not a fan of food–I’m a big fan–which means re-learning bad food habits that keep me healthy, fit and actively vegan.
This vegan junk food recipe is the perfect vegan comfort food, but it’s a reasonable portion size which means you (or just me) can enjoy it guilt-free.
This recipe is super delicious, fairly easy make and a perfect way to enjoy a Friday night vegan dinner with your loved ones.

These vegan chili cheese fries will hit all the taste points, and hit you with all the toppings so I hope you enjoy this recipe time and time again.
Kitchen Tools:
*Silicon bowls
*Cutting board
*Kitchen knife
Ingredients:
*Potatoes (cut into fries)
*Onion
*Black beans
*Vegan mince
*Vegan cheddar
*Yellow bell peppers
*Jalapeno peppers
Instructions:
*Preheat oven to 200 degrees Celsius.
*Chop potatoes into fries or wedges, whatever shape you prefer. Season potatoes and place them in the bottom of silicon bowls.

*In a skillet, use waste free broth, water or oil to cook onions for 5 to 7 minutes, until transparent and soft.
*Add vegan mince and cook for 5 minutes before adding black beans.
*Add seasonings such as paprika, cumin, oregano, salt & black pepper, garlic powder and whatever else you want, stirring regularly.

*Pour black bean and vegan mince mixture over the potatoes and add any other toppings you want, including: black olives, vegan sour cream, salsa or elote.
*Bake for 20 to 25 minutes until potatoes are soft, then add vegan cheese and cook for an additional 5 to 8 minutes, until vegan cheese is melted.

*Serve with any other vegan toppings you want, and don’t forget to sprinkle jalapeno peppers all over.
