Vegan Comfort Food ~ Vegan Broccoli Mac & Cheese

There’s nothing quite like a warm, comforting bowl of vegan mac and cheese on a cold winter day. Not only is it delicious and satisfying, but it’s also a great way to incorporate more plant-based foods into your diet. Broccoli is and has always been one of my favorite vegetables and this vegan dinner recipe is a staple in our house, but you can add cauliflower, carrots or any other vegetable that tickles your fancy.

One of the great things about vegan comfort food is that it can be just as indulgent and creamy as its non-vegan counterparts, but without the negative health consequences. By using plant-based ingredients like nuts, seeds, and vegetables, you can create rich and flavorful dishes that are much lower in saturated fat and cholesterol than traditional comfort foods.

One of my favorite vegan comfort food recipes is vegan mac and cheese with broccoli and garlic. Not only is it packed with flavor, but it’s also loaded with nutrients thanks to the addition of broccoli. Plus, the garlic adds a nice depth of flavor and helps to boost the immune system.

Easy Vegan Salisbury Steak & Onion Gravy w/Mashed Potatoes

When you spend much of your time far away from home, traveling the world, is that you find yourself homesick for the weirdest things. Food you haven’t thought about in two decades often pop into your mind and then BAM, it’s all you can think of until you satisfy that craving.

So here I am with vegan Salisbury steak on the brain when the truth is I really disliked it as a kid. Remember those six packs with the grill marks and a brown sauce that passed itself off as real gravy? They were never as good as you thought they would be, but somehow in June 2022 that’s what was on my mind and when a Romanian brand of vegan foods put a burger on the grocery store shelf, I knew what I had to do.

Fair warning, this recipe is pure nostalgia. No matter how much you fancy it up, veganize it or whatever else you do to it, this is still Salisbury steak. It’s tasty enough but it serves as a perfect reminder that being homesick is mostly about the memories, so I ate it and then called my sisters.

But some of you won’t listen or your heart will override your head and you’ll want old school Americana meals veganized so, let’s hop to it.

Retro Comfort Food ~ Vegan Mashed Potato Casserole

I don’t know about you all out there in the world but when I was a kid I loved a good mashed potato casserole. Sometimes it would be like an off-shot of a Shepherd’s Pie with ground beef and peas, other times it would just be straight up cheesy goodness with some animal served on the side.

However it was done, I loved nothing more than an old-fashioned mashed potato casserole. So I decided, why not take this classic recipe and veganize it?

Why not, indeed?

The key to any good mashed potato casserole is, of course, the mashed potatoes, which leaves you free to do whatever else you please…if you want anything else at all.

Spicy Vegan Cheese & Sausage Fries

As much as I try to eat healthy, enjoying big colorful Buddha Bowls, salads and other healthy vegan options, some days you just want something greasy and good. At least I do.

After a week of nonstop marketing and promotions across all time zones for my latest romance novel, Bared., I was in desperate need of some vegan comfort food. Other than a million different types of ramen, nothing says comfort to me like potatoes.

And what is greasier and more comforting than cheese fries? Vegan cheese fries with sausage, of course!

Potato & squash fries are the centerpiece of this vegan dinner!

With a few fun vegan hacks, you can enjoy this (mostly) guilt-free version of cheese fries, or you can make a few small adjustments and make comfort food light.

Vegan Mici, Mushrooms & Potatoes Two Ways

Who loves potatoes?

Me. I love potatoes and I could eat them every single day and not having them the same way. Whether its sweet potatoes or mashed potatoes, fries or home fries, I am here for POTATOES. So when I found these vegan mici (Romanian word for “little ones” or “small ones”) I knew it was the perfect way to over-indulge in potatoes.

Just a little, anyway.

And since I’m (still) editing like my life depends on it, I’m going to make this a quick-ish post.

This was kind of a hodge-podge meal, as you can see with just a few mushrooms because there were only a few leftover as it was almost grocery day. Again.

Easy Vegan Comfort Food ~ Vegan Schnitzel & Cheesy Pasta

Many of my friends think that eating a vegan diet means always eating healthy, and it doesn’t. Sure, most days I try to eat a whole food, plant based diet with plenty of fresh & colorful vegetables, grains, beans and legumes.

That doesn’t always happen.

As a professional writer and self-published author, there is a lot on my plate and sometimes I just want something hot and yummy and not necessarily totally healthy, and that’s all right because I work out regularly and I am as active as possible when I’m not parked in front of a computer screen.

So when I want to eat a greasy vegan schnitzel with creamy cheesy pasta and broccoli, I do.

This post doesn’t require a full on recipe because you can find your favorite brand of vegan chicken, or make your own vegan fried chicken, and cook in the air fryer or the oven with your desired seasonings. I used garlic, black pepper and smoky paprika and popped it in the oven on 200C so it would be crispy enough not to get soggy on top of the pasta.
