Healthy Vegan Salads ~ Tofu Veggie Salad Recipe

I love salad. Yeah sure, I’m a little picky about the types of lettuce I like to eat–Romaine is at the top of the list for me–but this summer there has been a bit of a lettuce (except for iceberg which…yuck) shortage around her which means I have had to get creative.

My favorite alternative lettuce is cabbage, of course. It’s super crunchy which allows me to experiment with heavier, creamy vegan salad dressings. And it’s so satisfying without adding a ton of calories to your budget. Plus, hello fiber???

This salad was refreshing and delicious, satisfied my hunger after a cardio kickboxing workout, and left me with plenty of energy to get started on my next novel!

Kitchen Tools:

*Cutting board
*Salad spinner
*Large mixing bowl
*Kitchen tongs or Salad tosser

Ingredients:

*Red & green cabbage
*Smoked tofu
*Soy sauce
*Fresh ginger, grated
*Tomato
*Carrots
*Red bell pepper
*Radish sprouts
*Scallions
*Garlic (2 cloves)
*Cocogurt (or other vegan yogurt)
*Hot sauce
*Dill (fresh or dry)
*Cumin
*Lemon zest & juice

What to Do:

For the smoked tofu: Dice tofu into bite-sized cubes and place in a container with a lid. Add minced one clove of garlic, hot sauce, soy sauce, and minced ginger to the container. Close and give it a good shake. Set aside.

-Chop and weigh the cabbage before placing it in the salad spinner and cleaning it to get off all the dirt and grime. I like to rinse it a few times, until the water runs clear. Spin it and add to large mixing bowl.

-Pre-heat oven (or air fryer) to 200 degrees Celsius (400F). Cook smoked tofu for 10 to 15 minutes or until it reaches desired consistency. Remove from oven and let cool.

-Chop the rest of the veggies into uniform pieces and place in mixing bowl.

-In a small mixing bowl add garlic, lemon juice and zest, cumin and dill. Mix until blended and toss, using leftovers to drizzle over the tofu on top.

And there you have it, a quick and easy vegan salad that’s perfect for hot days, workout days and especially days where you plan to have a vegan dinner out with friends. What’s your favorite healthy vegan recipe?

      I used to have it in my head that cabbage was for cole slaw and then I did it a few times and I’m a fan!
