Hey there & happy Monday!! How goes things?
Did you miss me? I should’ve said I wouldn’t be around but even that skipped my mind as I got lost deep in the bowels of the writing cave. I’m back but still busy so I’ll keep this vegan recipe post a bit simpler…maybe.
Well, I’ll try anyway.
I don’t know about where you are in the world but here in Romania fall has set in with reckless abandon. I’m talking, gray skies, rain, lots of leaves falling from the trees and weather in the low teens (Celsius, but still). As such, I’m shifting into fall recipes and soups, but worry not because I still have a few vegan salad recipes to share.

One of my favorite things to do in the kitchen is to take a recipe I liked and change up the herbs & seasonings, taking the same ingredients to a different part of the world. I’ve tried my hand at quite a few cauliflower salads over the Spring and Summer, but sometimes you just have to push yourself, you know?
I never would’ve thought cauliflower and olives would go together but can you really even have a Mediterranean style recipe without olives? I think it’s literally a rule. 🙂
I was wary but determined and here are the results!
Kitchen Tools:
*Cutting board
*Kitchen knife
*Kitchen/food scale
*Large mixing bowl
Ingredients:
*Cauliflower, cut into florets
*TVP (or other vegan protein source)
*Yellow heirloom tomatoes (any will do)
*Cucumber (halved & chopped)
*Scallions (sliced)
*Green olives
*Mustard
*Herbs (oregano, thyme & marjoram)
Instructions:
*Preheat oven to 185C/350F
*Rehydrate TVP and then season, cooking in the oven for 25 minutes

*Chop cauliflower into bite-sized pieces. Mix herbs & mustard and coat cauliflower completely.
*Cook cauliflower for 30 minutes or until tender
*Chop the remainder of the vegetables and place in a mixing bowl.
*Season with salt & black pepper, and other herbs & spices.

*Add cauliflower and TVP to the mixing bowl and toss.
I think this recipe is good as it is, but you can made a mustard based sauce if you think it’s necessary. You can also add grains if you want to flush this meal out but with cauliflower and a healthy amount of protein, it’s really satisfying.
