Sweet Potato Harvest Bowl Recipe

Sometimes when you’re busy but you still have to eat, instinct is to reach for the phone and have something that hits all your pleasure centers delivered right to your door. But then you regret it when you feel lethargic or step on the scale and you promise yourself that next time, you’ll do better.

But will you?

Now, thanks to yours truly, you will.

Why?

Because this delicious vegan sweet potato harvest bowl is delicious, hearty and easy to make.

Keep in mind with easy vegan recipes like this that you can enjoy it time and time again by switching out one ingredient for another. Instead of cauliflower, add broccoli or Romesco. Instead of sweet potatoes, go with Russet or purple potatoes, or even celery root. Change chickpeas for a vegan meat alternative or another type of bean. the point is that this is a really great vegan recipe for people who don’t want to spend too much mental time on creating meals. Add herbs & seasoning and call it good.

Kitchen Tools:

*Baking mats
*Cutting board
*Kitchen knife
*Ramekins
*Tongs

Ingredients:

*Cauliflower
*Sweet potatoes
*Chickpeas
*Cocogurt
*Garlic clove
*Mustard
*Lemon juice
*Tahini paste
*Herbs & spices (chef’s choice)

Instructions:

*Preheat oven to 200C/400F

*Chop the veggies into uniform pieces so they cook evenly. Toss with your chosen blend of herbs and spices. If you’re using oil, be sure to put it on the vegetables before the dry seasoning.

*Place on a baking bat and bake the vegetables for 20 to 25 minutes or until fork tender.

*On another baking mat add the drained & rinsed chickpeas, and season well. Give it a shake to make sure all sides are coated and pop into the oven for 10 minutes.

*While everything is in the oven, grab a small mixing bowl and whisk in vegan yogurt, lemon juice, mustard, tahini paste and minced garlic until blended.

*Drizzle the vegan yogurt sauce on top of the veggies or serve it on the side as a dipping sauce.

*And if you have the time or energy, whip up a quick mocktail with: fresh orange & lime juice, elderflower syrup & tonic water. Salted rim optional!
