Cheesy Vegan Potato Bake

You know, there’s something to be said about simple vegan dinners beyond the simplicity of them. Things in my house have been very busy lately. I’ve been participating in several book events online, working on Emerald Creek book 2 and often other necessary things like food end up taking a backseat. I spent all evening Sunday putting together ornaments for a giveaway in my book group, along with sending out stickers and magnets, which meant labeling a ton of envelopes and packages for international shipping.

Save me, please!

Just kidding…sort of.

Anyway the business of this time of year means that dinner doesn’t always get the fancy vegan dinner treatment it deserves. On this night in particular, my hubs made dinner and it was a pleasant surprise.

His dish was the epitome of an easy vegan dinner recipe and it was so dang delicious that nothing else mattered.

These Cheesy Vegan Potatoes had 2 main ingredients–vegan Feta cheese and potatoes–and that was more than enough for this potato lovin’ vegan! I was so busy in the writing cave right until the plates (silicon baking dishes) came out and then I had this steaming hot dish of potatoes and vegan cheese.

Um, yes please!

Kitchen Tools:

*Silicon baking dish
*Cutting board
*Grater
*Oil spray dispenser

Ingredients:

*Potatoes
*Vegan Feta cheese (Violife brand is what he used)
*Sunflower oil
*Black pepper

Make Every Bite Count & Count Every Bite

Instructions:

*Preheat oven to 185C.

*Scrub your potatoes with a veggie brush if you plan on leaving the skin on, which you totally can here. There are plenty of nutrients in potato skin so the choice is yours.

*Slice the potatoes into thick-ish slices and spray with sunflower oil, or whatever oil you prefer.

*Grab your seasoning! Add your favorite herbs & spices into a large mixing bowl with the potatoes. I didn’t get a complete list from him, but I tasted oregano, marjoram, salt & black pepper, garlic salt and cayenne pepper.

*Layer the potatoes in 2 silicon dishes, or more depending on how many people you’re cooking for. Shred vegan Feta cheese on each layer. Bake for 20 to 25 minutes, or more if needed. Potatoes should be tender but not too soft.

*Cool for a few minutes and then serve!

This was a really great and simple vegan dinner that I found satisfying and delicious. It’s not what we’d normally have for dinner but when you don’t keep a lot of junk or processes foods in the house, it was a great in-a-pinch vegan dinner recipe.

    This looks really good, but say potatoes to me and I’m there! The vegan feta was a really pleasant surprise to me when I first bought it. Very nice.

      Agreed on the potatoes thing…and the feta. My hubs has been asking me to make your whipped feta again with it!

        Boy do I love that whipped feta. I’ve made it several times now, just last weekend for a gathering, and it is always a hit, and I don’t bother to announce that it is vegan. Not that I want to be deceptive, and if they ask I’ll tell them, but some folks won’t even taste something if they think there is no dairy in it!

        Right? I’ve won my in laws over with desserts so now when I bring something it’s not just some American or other style of cuisine, it’s also vegan and they’ll at least try it out before declaring that something about it “tastes weird”.

    Potatoes are the best and for some strange reason I forget about them.
    Funny story, yesterday I was at a holiday party for one of the publications I write for.
    There was nothing vegan to eat, which was expected, and I was fine with socializing and meeting everyone. A few people asked why I wasn’t eating. I said I was “vegan” and they were fine with that!
    During the party I felt a little dizzy and thought to myself, I have to eat.
    I excused myself and blamed it on the traffic. “If I don’t leave now, I’ll get stuck in holiday traffic.”
    I got to this supermarket, and there was nothing of substance to eat. All the brands of hummus they had contained sugar. Even the tofu had sugar.
    So I went down the aisles and found this fairly clean brand of potato chips called Siete. I get in the car and try to open the bag, and I couldn’t.
    I got home, opened the bag with scissors, poured the chips in a bowl, added some coconut aminos. So good, I filled another bowl and ended up eating the entire bag. That — and two persimmons — was my dinner.
    God bless potatoes, even if they are chips. It truly hit the spot.

      Potato chips for dinner? Delicious! I’ll have to remember Siete b/c potato chips are my weakness and I have yet to find a non-greasy brand that doesn’t screw up my stomach now that I eat almost no oil. Too bad they didn’t have anything for you at the party but after a while we get used to it, don’t we? But…potatoes to the rescue!

        There’s avocado oil in Siete, but they are kettle cooked so it’s more like eating real potatoes versus fried chips.
        Yes, I’m definitely used to not eating when out socializing. About a month ago I went to another function and they actually made a vegan meal for me. It was carbs overload — with half a plate of rice and some broccoli but at least they tried. Then they gave me a fruit plate for dessert which was very nice.
        All the years that I was vegetarian before veganism, I was fine ordering a potato at a restaurant. I’d put the craziest things on it — like hot sauce and vinegar.

        Hot sauce is one of my go-to potato toppings for fries or chips. Give me sauerkraut with caramelized onions, even!
