Spicy & Sweet Roasted Cauliflower Recipe

I recently came across this delicious looking cauliflower recipe on Instagram and even though it wasn’t a vegan recipe, I knew that I had to veganize it. Why? Well, let’s see…

First, cauliflower is delicious. Take any flavor profile you want and rub it onto a cauliflower and no one with taste buds will be disappointed.

Second, it’s totally calorie friendly. At 23 calories per 100 grams, you can’t really get much better than that.

Third, it’s super satisfying. So I’ll refer you back to the second point, which means that you can satisfy your hunger without a lot of calories, which makes weight loss and maintenance easier.

Fourth, tons of Vitamin C. Cold and flu season is upon us, so it’s always great to get a bit more vitamin C in where you can.

And those are just a few reasons. So, let’s get this oil free vegan cauliflower recipe cooked, shall we?

Kitchen Tools:

*Baking mat
*Cutting board
*Whisk
*Baking brush

Ingredients:

*Cauliflower
*Soy sauce
*Garlic (minced)
*Chili pepper paste
*Sweet chili sauce
*Tahini
*Mustard
*Turmeric (ground or fresh)
*Fresh mint

For garnish –> Vegan yogurt, mint, pepper paste, cumin & lime juice

Instructions:

*Preheat oven to 200C/400F

*Cut cauliflower into quarters, removing the core, stem and leaves. Place on a baking mat or parchment paper and season with salt & black pepper, soy sauce and turmeric. Spray it with water as needed and bake for 15 minutes until tender(ish).

*In a mixing bowl, whisk together remaining soy sauce, pepper paste, tahini, mustard, sweet chili sauce, minced garlic along with any other desired herbs and spices.

*When cauliflower is tender, remove it from the oven and brush the pepper paste sauce all over the cauliflower until it’s fully coated. Return to oven and bake another 15 to 20 minutes, or until it’s fork tender but not falling apart.

*Serve on top of the yogurt mixture.

I added roasted cabbage quarters to this recipe along with a few slices of crusty bread but you could add your favorite grain, potatoes or anything else. The sauce is really versatile so you can make a bigger batch and brush it on top of everything.

This was so good! I mean I love cauliflower and this was exceptional. The only downside? The whole house smelled like cauliflower for the rest of the day and every time I went to the kitchen, I just wanted to eat. Again. And it’s calorie friendly so I totally could have if I wanted to…but I restrained.

    That sounds really good!
    I’ve made so many cauliflower recipes over the years, but the most recent was a flop.
    I think I used too much curry and it was no longer flavored, but over-powered!
    I threw it out. LOL!
    But, yes, cauliflower is so filling; a little goes a long way and hardly any calories. I used to make cauliflower rice dishes. Maybe I’ll go back to that.

      I love cauliflower more and more over the years but I’ve had plenty of hits & misses. I have to admit, I haven’t tried cauliflower rice yet!
