How’s the weather in your neck of the woods? It’s been crazy hot here, like in the thirties and incredibly humid which my fellow Midwesterners know means it feels even hotter than the temperature indicates. What’s my point?
Oh, that’s simple. My point is that it’s salad time when the temperature gets this hot. You don’t have to use the stove or the oven, or even your air fryer if you don’t want to because the ingredients are simple, they are fresh and if you can handle it, super seasonable.
Mixed cabbage salad is (sort of) a creation of my own mind. I love to eat a nice vegan salad for lunch but for the past few months it’s been hit or miss to find Romaine or Bibb lettuce, or most lettuce that’s not iceberg. So I grabbed a different type of ‘leafy green’ in the form of cabbage.

The premise is the same as your regular lettuce salad, except you can use cabbage which allows you to do a lot more in terms of making vegan salad dressing. You can make an extra creamy sauce that will really cling to the red cabbage or a fermented lemon vinaigrette to keep the whole vegan dish light and airy.
And if you come upon some other types of cabbage like napa or savoy, toss it in the bowl and massage it like it’s your job!
What You’ll Need:
*Large mixing bowl
*Cutting board
*Salad tongs
*Kitchen knife
*Small jar (option if you make an oil free vinaigrette)
Ingredients:
*Green cabbage
*Red cabbage
*Cucumber
*Carrots
*Apple
*Ginger
*Scallions
*Mustard
*Vegan cocogurt
*Fresh dill & parsley
*Apple cider vinegar
Instructions:
*Rinse all veggies and scrub the ones you plan to keep the skin on, like the carrots.
*Chop all vegetables into uniform sizes and place in a large salad bowl.

*In a small bowl, whip together ginger, herbs and cocogurt until you have a thick and creamy vegan salad dressing. If you find the dressing is too thick, add apple cider vinegar just a couple of teaspoons at a time until it thins out a bit.

*Drizzle the vegan salad dressing on top of the salad and toss with your tongues until well coated.
*Enjoy and feel great!
