Happy Monday, lovelies! Did you have a good weekend?
It’s been pretty chilly here and I spent the weekend doing all the housekeeping things one must do as a book release approaches, which was mostly spending hours hunched over my laptop to get it all ready.
And…it is!!!

But when there’s all kinds of stuff like that to do, you have two choices in the kitchen; big two-fer meal or something simple. On this night, I opted for a simple vegan sandwich I saw on Pinterest. It wasn’t vegan but the recipe was simple enough to turn it into a delicious vegan sandwich.

Don’t Like Artichokes? Don’t worry.
I was worried this vegan sandwich would be a big flop because my hubs isn’t really a fan of artichokes. Or rather, he’s a sometimes fan of them. But let me tell you that with all the delicious flavors inside this sandwich, he really enjoyed it.
The artichokes aren’t overshadowed by the other flavors but it’s not a super artichoke-y taste.
Pantry/Fridge Staples
Another great thing about this easy vegan sandwich? Most of the ingredients are probably found in your pantry or fridge, so it’s an easy fix for a quick weeknight dinner.
If you’re a fly by the seat of your pants kind of cook, this is a great option because just go into the kitchen, grab what you need and in 15 minutes you have a delicious sandwich.

Kitchen Tools:
*Mixing bowl
*Knife
*Cutting board
*Large spoon
Ingredients:
*Artichokes (hearts or quarters), chopped
*Vegan yogurt (or mayo)
*Fresh dill
*Shallot, diced
*Lemon zest & juice
*Sundried tomatoes, rough chopped
*Wheat bread (chef’s choice!)
*Pickles, diced
*Capers, chopped
*Mustard

Instructions:
*In a large mixing bowl, add chopped artichokes, shallots, lemon zest, pickles, capers and sundried tomatoes. Add salt and pepper, plus anything else you want to use as seasoning.
*In a small mixing bowl, whisk together dill, yogurt, lemon juice and mustard until blended.
*Pour yogurt mix into other mixing bowl with the artichokes and stir until blended.
*Place on your delicious sandwich bread and enjoy! I don’t think you need to add extra mustard or vegan mayo directly onto the bread, just slap it on the bed and gobble it up.

On The Side
I made a small salad on the side with carrots, apple, mint, lime zest and cocogurt. It was simple, refreshing and delicious.
