Easy Summer Green Sauce

When it comes to summertime, I’m always looking for ways to get fresh ingredients into my meals. My love of salad is well-documented so that’s not what I’m talking about obviously, though I do have some really cool ones coming up for you.

So, what am I talking about?

Herbs. Specifically, fresh herbs. You know the deal, you buy fresh basil because you’ve found an amazing recipe on Instagram or through one of your lovely blogger friends but you don’t need 50 grams of basil. It’s not enough for pesto but it’s too much to add to a salad, so what do you do?

Turn it into a sauce. Okay, obviously not just basil but ALL the fresh green herbs you have or can find.

This is a simple recipe that’s completely vegan without trying to be, it’s just herbs…okay and maybe a few other things but not many, I swear!

You’ll only need the following kitchen tools: food processor/blender, rubber spatula, jar with a lid.

Add all the ingredients to the blender and let it rip until you get a nice semi-smooth green sauce.

You’ll love this easy vegan green sauce because it’s packed with nutrients from all the delicious herbs, including:

Parsley
Dill
Scallions
Shallot
Chili pepper
Basil
Garlic
Mint
Lemon juice & zest
Harissa paste
Water

Add everything but the water to the blender bowl and pulse 5 or 6 times before you let it rip on medium-high. Let it go until the pieces are broken up and start to look like a sauce. If you need to, scrape down the sides and run it again.

If your green sauce is still too thick, add water just one tablespoon at a time until you get the right consistency. Don’t use too much more than one tablespoon because all the greens are full of water and this can become a green juice really fast.

Store the sauce in a glass jar in the fridge for up to a week. If you add a few drops of oil to it you can probably make it last longer than that. I’ve had mine in the fridge for more than a week and it’s still fresh with no signs–or smells–of fermentation.

Always do a sniff test if you’re not sure.

How To Use Green Sauce?

One of my favorite applications is to add it to some vegan yogurt and make a quick and flavor salad dressing or dipping sauce.

Add vinegar for an oil-free vinaigrette.

Use it as is on top of fresh tomatoes for a quick summer snack.

Add water and nutritional yeast to make a sauce that will hug onto your favorite pasta like nobody’s business!

The possibilities are endless and they’ll be right at your fingertips with this easy vegan all-purpose sauce.
