There’s this dish called Muhammara which highlights the flavors of peppers, walnuts and pomegranate and I was really intrigued by the look of the dish but I wanted to make it my own by reducing the calories while retaining the color and flavor.

That’s the great thing about food, one small spark of an idea can turn into a new dish entirely. That’s kind of what happened here. Basically I saw a roasted muhammara recipe and thought to myself that I could make something like that and turn it into a harvest bowl type of vegan recipe.

This vegan recipe has a relatively simple list of ingredients and it’s a fairly hands off recipe so no matter what you have going on, you can find time to make it for yourself. And when you have a little extra time, you can mix and match other ingredients to make it something completely new.
Kitchen Tools:
*Silicon baking mats
*Cutting board
*Kitchen knife
*Food processor or blender
Ingredients:
*Red peppers (pointed and/or bell)
*Onion
*Garlic
*Mushrooms (I used shitake any kind will be fine)
*TVP
*Chickpeas
*Pinenuts
*Lemon zest
Instructions:
*Preheat the oven to 185C/375F
*Rehydrate the TVP according to package instructions. Then choose whether you want to bake (200 for 20 minutes) it or cook in the air fryer (200C for 12 minutes).

*Chop mushrooms into uniform sizes and place on silicon baking sheet. Bake for 15 minutes and then toss or stir.
* Chop onions and red peppers and place on second baking sheet.
*Slice the top off a head of garlic and place it on the baking sheet.
*Rinse and drain chickpeas and then place in a mixing bowl, adding salt, black pepper, garlic, cumin and sweet paprika. Toss until combined and then place on baking sheet with onion and garlic.

*Bake onions, garlic and chickpeas 12 to 15 minutes, more if you want the chickpeas a little crispier or if you need the garlic to cook longer.
*Let the onion, garlic and peppers come to room temperature before adding them to a food processor blender along with pine nuts and lemon zest. Run until smooth but thick. Set aside.
*Pour the pepper mix on the bottom of a plate or bowl and top with the other ingredients.
