Happy Hump Day, my pretties!
Today’s vegan recipe is a nod towards Spring, which I really hope is here to stay this time. When the weather is warm I lean really hard into salads, which means I’m always coming up with new combinations to make sure I keep my tastebuds happy.
Now, I’m not saying that I created this salad recipe but I did not, for once, find this recipe on social media.
Here in Romania there is only one way to get your hands on a Granny Smith apple and that is to buy the six pack it comes in. There is no bulk section where you can choose how to buy and since Granny Smiths are my favorite, I had to do it. BUT, I also have a mild pectin allergy which means I can’t eat apples a lot so what’s a girl to do?

There’s always an apple crumble, of course. But I wanted something fresh, another way to enjoy an apple without just biting into it.
So I eyed that cucumber that goes in pretty much every salad I make and it slowly came together.
This recipe has just 4 ingredients: apples, cucumber, vegan Feta and salt. Of course you can always add a vegan salad dressing to this, but the apple and the feta are so flavorful that it would be a waste of calories.
To Peel or Not To Peel
Thanks to my aforementioned pectin allergy I have to peel the apple but I use the skins to make an apple syrup for cocktails & mocktails.
If you want to get rid of some of the water that cucumbers release when salted, I suggest making a vee cut in the center and removing that seeded section. You can totally keep it but this is more about presentation or if you let this delicious vegan salad sit for a while.
The choice is totally yours whether or not to peel the apples, but I think it’s another step you can skip if you need to.

Vegan Feta
There are quite a few brands of vegan Feta or vegan Greek block and some crumble excellently while others are better diced, to what you’ll do with it depends on what brand you get. I thought it looked nice to dice it to match the apples and cucumbers but hey, you do you.

Add-Ons
I’ve made this salad a couple of times and one of the additions I really like is fresh dill and mint, it really enhances the flavor. And mix in a little bit of sojagurt (vegan soy yogurt) to transform and fancify the dish.
How To Make Apple & Cucumber Salad
Make sure you scrub the skins if you plan to eat them, running under cold water.

Chop everything in uniform bites, season and toss inside a mixing bowl. Serve immediately.
This is a very cool and refreshing salad that works well with spicy dishes like curries, hot wings and the like.
