Annnnd we’re back with another vegan soup recipe. I know what you’re thinking, holy crap lady, aren’t you sick of soup yet? And the answer is … nope. I love soups, stews, curries, bisques and anything else soup-like. Especially when it’s cold and I’m spending all day in the writing cave.
Vegan soup recipes are easy and delicious and packed full of nutrients, so what’s not to like about them? And this particular cauliflower bisque is extra creamy, incredibly delicious and doesn’t require a lot of effort, so it’s pretty much the perfect vegan cold weather recipe.
Right?
Plenty of people have a complicated relationship with cauliflower but I love it. Give me cauliflower curry, cauli-wings, roasted cauliflower and pretty much any other application and I will happily gobble it down. And when winter comes and cauliflower is huge and crunchy, I can find all kinds of uses for it, including a creamy bisque.
This particular roasted cauliflower bisque is easy to make because you can just pop it in the oven to get it to the desired consistency, and all you have to do is season it and warm it up on the stovetop. It’s easy, delicious and a perfect plant based vegan recipe that you’ll wonder why you ever doubted cauliflower in the first place!

So, stop with your doubting already and grab a perfect cauliflower from your local market, and get down to business!
KITCHEN TOOLS:
*Food processor
*Baking mat
*Cutting board
INGREDIENTS:
*Cauliflower, chopped
*Chickpeas (drained)
*Garlic (whole cloves)
*Onion, chopped
*Fried onions
*Water or waste free broth
INSTRUCTIONS:
*Chop cauliflower into florets or smaller. Halve the onion and then quarter it because you want it to cook but not too quickly

*Season with herbs & spices. Add water or oil to help with cooking without sticking and toss so everything is coated evenly. Wrap garlic cloves in aluminum foil and add to the baking sheet.
*Bake at 180C/350F for 15 to 20 minutes, until soft and tender.
*Let everything cool enough to go into the food processor without exploding or causing injury.

*Add to food processor and run until smooth and creamy. It may take a few spins in the food processor and you WILL have to add a bit of liquid as you go unless you have the Iron Man created food processor, which I do not.
*It might take some effort but you’ll need to run the process and then scrape down the sides and stir until your vegan cauliflower bisque is smooth and creamy.
*Add herbs and spices as desired and then put the vegan bisque into a pot to warm it through.

*Serve with crispy onions, croutons or nothing at all, the choice is totally yours!
