Crispy Vegan Mushroom Sandwich

I don’t know if you remember but I recently spent a week in Rome during the summer of 2023 and it was a great time. I posted loads of content about delicious vegan food, museums, Italian culture and more. So. Much. More.

Is that some kind of brag? Maybe, I dunno.

The point is that recently I was thinking about that trip and particularly about this small but slightly upscale vegan eatery that had fried baby octopus on the menu that was made from fried oyster mushrooms. They were magnificent. Utterly delicious and just memorable enough that when I thought about it again, I knew I had to recreate it…but with a twist.

This is an easy vegan recipe and the best part is that you don’t have to turn this into a vegan sandwich the way I did, you can eat it as an appetizer or pair it with any grain you want. Just add a wedge or two of lemon and serve. The point is that you can figure out how you want to serve them when you’re ready to make them, but they’re easy to make and absolute DO NOT require you to deep fry them.

My electric oven did most of the work and I don’t think this vegan mushroom recipe suffered at all from this decision.

What You’ll Need:

*Mixing bowl
*Silicon baking mat
*Tongs

Ingredients:

*Oyster mushrooms
*Cornmeal
*Oregano & Thyme
*Lemon zest
*Lemon juice
*Granulated garlic
*Smoky paprika
*Pink salt & Black pepper

Instructions:

*Slice oyster mushrooms into strips, about 3 to 4 strips per mushrooms

*Place in large mixing bowl and toss with cornmeal, herbs and seasoning until well coated.

*Lay on silicon baking mat, giving the mushrooms room to breathe.

*Bake 10 to 15 minutes or until crispy, this time will almost certainly vary by the stove you use. Use your tongs to toss the mushrooms for an even cook.

*Squeeze lemon juice on top and assemble your sandwich. Vegan yogurt, herbs and the like are totally optional but they take this vegan sandwich recipe to another level. This sandwich is crispy and delicious

*Assemble your sandwich or vegan buddha bowl or whatever you need to think of it as to get it into your belly.
