Laziness, for me, isn’t a way of life but it is something that happens on occasion and usually it’s because I’m deep in the writing cave and time simply gets away from me. For all of October, this has been my reality.
I got a story idea and I decided that now was that time that I needed to focus on, or hyper-focus as some might say. So I’ve been spending every free moment when I’m not writing for my clients, writing this new story, and that means that I’ll often look up from the laptop and wonder how it got so late.
Of course, my go to meal is often something that requires the oven to do all the work, which often means that we’re eating a little later if it’s my turn to cook. My hubs is a game developer so he often ends up in the same situation…
Anyhoo, that’s the reality of a self-employed creative.

So we have to use that creativity to get something yummy and nutritious on the table. Stat.
This particular lazy vegan recipe is pretty easy and it’s high-protein, at least my version was. You can use something other than TVP but it has the best protein ration of pretty much all the other vegan protein sources (probably not straight up protein powder but we’re talking food here), and the least amount of fat.
Speaking of TVP, it’s the most time consuming part of this meal only for the fact that it requires two steps–rehydrating and then cooking. Everything else goes straight into the oven…even the gnocchi.
Now, let’s get lazy!
Kitchen Tools:
*Cutting board
*Kitchen knife
*Silicon baking sheets
*Tongs
*Large mixing bowl
Ingredients:
*Cauliflower
*Gnocchi
*TVP
*Chickpeas
*Miso paste
*Maple syrup
*Soy sauce
*Hot sauce
*Sesame oil

Instructions:
*Preheat oven to 195C/375F
*Chop cauliflower into bite-size pieces and place on one baking sheet.
*Add gnocchi and chickpeas (drained & rinsed) on another baking sheet.
*Oil is optional, as always. Season with: turmeric, salt, black pepper, ground coriander, oregano & marjoram. Place the herbs & spices in a ramekin and sprinkle over the food, tossing with your hands until coated.
*Cauliflower will take about 20 to 25 minutes in the oven and the gnocchi & chickpeas will take about 15 minutes to be sure to time it right.

*If using TVP, get it started early if you plan on cooking in the oven, or pop it in the air fryer. It only takes 10 minutes so if you do 2 batches it should finish up right as the rest of the food is done.
*In a small mixing bowl, whisk together miso paste, maple syrup, soy sauce, hot sauce & sesame oil.
*When everything is done you can layer it on the plate or add everything to a large mixing bowl and mix. Drizzle with the miso paste and ENJOY!!!
