Easy Vegan Sides ~ Sweet Potato Rounds w/Feta & Sundried Tomatoes

Happy Monday, foodies and food lovers alike! How was your weekend? Mine was…relaxing and fun. I spent almost all of Saturday in the writing cave getting lost in my new story. It was a blast and I hope your weekend was at least that fun.

So we’re back with another vegan recipe and this one is super flavorful and kind of different.

I was browsing on Pinterest while adding some book promo to the pages and I came across this delightful looking recipe that wasn’t vegan, but it was easy enough to veganize. Sweet potato rounds with feta and honey.

Sounds simple enough, right?

Well I added my own twist on it, of course, and it turned out as delicious as I hoped.

But, let’s take a minute to talk about weird food combos. Even though the photos looked absolutely amazing, I was hesitant because I never (ever, ever, ever) thought that sweet potatoes and feta cheese would be good plate companions, but y’all they went together like Forrest & Bubba! Like Lily & Marshmallow!

Yet again, my preconceived notions were proven wrong so lets talk about vegan food lovers!

Kitchen Tools:

*Cutting Board
*Baking sheet
*Kitchen knife
*Mixing bowl
*Spatula

Ingredients:

*Sweet potatoes
*Vegan feta/Greek cheese
*Sundried tomatoes
*Maple syrup (or agave)
*Balsamic vinegar
*Rosemary & oregano

Instructions:

*Pre-heat oven to 185C/375F

*Peel sweet potatoes and slice into thick (finger thick?) rounds.

*Season with salt, black pepper and smoky paprika. If you want to use oil, here is where you’ll add it to both sides before seasoning.

*Place sweet potato rounds on a baking sheet in one layer and bake for 20 to 25 minutes, or until soft.

*While potatoes cook, crumble vegan feta cheese into a small mixing bowl. Chop sundried tomatoes and add them as well, along with the herbs.

*Drizzle maple or agave syrup on top along with balsamic vinegar. Blend using a rubber spatula. You want everything combined but not so broken down it becomes mush.

*Serve potatoes in one layer with the vegan feta sprinkled on top.

I served this with TVP as a sort of vegan fried chicken to keep it simple, but pretty much any protein source would work well with this simple vegan side dish.

    While I’m not a big fan of sweet potatoes (and I want to be because they are so good for you) but I don’t mind them when they have company, so I think I might love this one!!!!
