Sometimes you just want to try something new. Often you’re met with success but other times, not so much. That’s okay though, right? You learn more from your mistakes than your successes, at least I do.
Today’s vegan recipe is a case in point. In my head the idea of a cranberry and feta sandwich sounds delicious. I saw a few photos of non-vegan versions and I couldn’t get it out of my mind, so I bought a couple packages of cranberries and made a vegan cranberry sauce. I gave it a couple of days to settle and then I was ready to make my yummy cranberry and vegan Feta cheese sandwich.

For the vegan Feta I decided to try to make it a bit more spread-y by combining vegan Feta cheese with vegan Feta cream cheese. It was the perfect one-two punch of Feta flavor but alas, it still didn’t blend the way I wanted it to. I know I could’ve added another fat source such as vegan yogurt or even milk but I didn’t want to. I was determined to get it right this way and mostly it worked. So, ha!
I used a lovely rustic rosemary potato bread that was perfect for open-faced sandwiches, which are my husband’s favorite type of sandwich.
What I Loved
The flavors! Holy smokes the flavors are bold and incredible. I used orange zest, red wine and a cinnamon stick in my cranberry sauce and those flavors combined with the Feta? Amazeballs.

The vegan Feta cheese was the perfect knockout punch of flavor and the creaminess offset the tartness of the cranberries so I’m considering this a real win.
What I Didn’t Love
The way the vegan Feta refused to spread properly on the bread. I fully admit it was a mistake of my own making and there were things I could have done to improve it. Next time I might take a page from the whipped vegan feta I made earlier this year and pop it in the blender. There wasn’t even enough to use a blender this time but maybe I’ll make a spinach & feta sandwich too to justify the big batch of double-Feta flavor.
Will You Love It?
Absolutely. If you like cranberry sauce and feta cheese, there is absolutely nothing to dislike about this sandwich, except that there isn’t more of everything. It’s easy to make and you can even use canned cranberry sauce or any other type of preserves/jams you have. Even as I write this, I’m thinking about using the quince preserves my mother-in-law made or the sundried tomato jam I have in my fridge.
