Today, I’m here to shake up your sandwich game with a delicious and super satisfying vegan sandwich that’s bursting with flavor! Get ready to meet your new lunchtime obsession: oven roasted eggplant, onion, and zucchini sandwiches topped with melty vegan gouda cheese.

Tips for Your Best Vegan Sandwich Ever

  • Mix It Up. Don’t be afraid to play with textures and flavors! Add some crunchy fresh veggies, creamy spreads, vegan cream cheese or even a sprinkle of nuts for a delightful surprise.
  • Toast It Right. A little toast goes a long way! It adds a satisfying crunch and helps keep everything together, especially if you’re using juicy toppings. You don’t need to toast it forever, just a minute or two so it’s toasty but not crunchy.
  • Layer Smart. Keep heavier ingredients like roasted veggies on the bottom to avoid a soggy situation. Light and fluffy toppings can go on top for that perfect bite.
  • Season Every Layer. A little pinch of salt and pepper on each layer makes a world of difference. Don’t skip this step! In fact, salt & pepper things like tomato and cucumber after you slice them while they sit to help them shrug off some of that water and bring out their natural flavors.
  • Choose Quality Bread. Go for a sturdy bread that can handle your fillings without falling apart. Sourdough, ciabatta, or a hearty whole grain are all fantastic choices. Remember quality doesn’t mean expensive. Hearty or sturdy are adjectives you’re looking for with sandwich bread. I recommend hit up the grocery store bakery or a regular bakery and get a loaf so you can make the slices how big/small you want.
  • Spread the Love. A good spread, like vegan mayo or hummus, can add moisture and flavor that ties everything together. Try guacamole, roasted red pepper spread or pesto.

Now, let’s get to this wickedly delicious vegan sandwich.

Kitchen Tools:

*Cutting board
*Kitchen & Bread knife
*Baking mat

Ingredients:

*Eggplant (sliced)
*Zucchini (sliced)
*Onion (halved & sliced)
*Roasted red bell pepper
*Salt and pepper 
*Bread (I used potato bread)
Vegan gouda
Dijon mustard

Instructions

*Crank that oven up to 200°C (400°F).

*Roast the Veggies. In a large bowl, toss those beautiful eggplant and zucchini slices salt & pepper along with other herbs & spices. If you choose, add oil but I think it’s mostly unnecessary.

*Spread them out on a baking sheet lined with a baking mat.

*Roast Away. Pop the baking sheet in the oven and roast the eggplant and zucchini for about 15 minutes, flipping halfway through. You want them tender and slightly browned—yum! At the halfway mark, add the onion slices to the baking mat

Assemble the Sandwiches. Now, let’s put it all together! Spread a thin layer of Dijon mustard on each slice of bread. Start layering: first, the roasted eggplant, then the zucchini, followed by those luscious caramelized onions, roasted red bell pepper and top it off with a slice of vegan gouda cheese.

Pop it in the oven if you want to melt the cheese. OR feel free to add the cheese on one side of the sandwich bread and melt it in the hot oven on its own.

*ENJOY your sandwich. Add potato chips, salad or crunchy pickled vegetables.

      It really does and it’s about the only way I can eat zucchini! Other than zucchini pie which tastes oddly like apple pie/cobbler.

        I love zucchini in Korean dishes, that’s usually how I eat it. But roasted is something new to try!
