I think it is officially time to stop saying that I don’t like eggplant. When I’m at the grocery store and I grab an eggplant without my husband having to ask, it’s safe to say that I picked it out for me.
Right?
Well that’s just what happened on a recent trip to the grocery store. I didn’t know what my plan was when I grabbed it and then it just came to me. Pasta sauce.
You heard that right. For some odd reason I looked at that big purple beast and thought to myself, “You might just make an incredible pasta sauce.”
Why? That’s anyone’s guess so let’s just chalk it up to creative license.

This is a quick and easy delicious vegan recipe that also happens to be plant based and very delicious. Oh and best of all? Once again, the kitchen gadgets do most of the work.
What You’ll Need:
*Food processor or Blender
*Silicon baking mat
*Stock pot
*Cutting board
Ingredients:
*Eggplant
*Onion
*Garlic
*Tomato sauce
*Chili pepper flakes
*Herbs (oregano, basil & thyme)
*Waste free broth
*Pasta (I used tagliatelle)
*Nutritional yeast
*Lemon juice
Instructions:
*Preheat oven to 225C.
*Scrub and slice eggplant the long way and, placing it face down on the baking mat. Cut onion into quarters and place it on the mat as well. Drizzle with olive oil or just season with salt, black pepper, garlic and paprika.
*Slice the top off a head of garlic, drizzle with oil and wrap loosely in foil before placing it on the baking mat.

*Cook for 20 to 25 minutes until eggplant is tender, onions are translucent and garlic is fragrant.
*Let cool and add all the ingredients to the blender, until until mostly smooth.
*Add herbs and spices, nutritional yeast and lemon juice, run until smooth.
*Add chili peppers to a warm skillet and just when you begin to smell them, add the tomato sauce and cook about 5 minutes until it’s nice and thick. Then add eggplant mixture.

*Stir frequently to avoid burning, adding more seasoning as necessary. Cook 5 to 10 minutes over medium heat, toss with pasta cooked to your preference.

And that’s it. A quick and easy vegan pasta sauce that contains something other than tomatoes. Okay, it also contains tomatoes but that part is totally optional.
