Lazy Vegan Meals ~ Jerk Spiced Oven Roasted Veggies

Picture this: it’s hot. You’re feeling lazy but also hungry and you’re not in the mood to order out, if that’s even an option.

What do you do?

The simple answer is slap together your favorite vegan sandwich, which is an option I often endorse (check out this Vegan Tofurky Sandwich or this Vegan Tuna Tapenade Sandwich). But some days you want to still feel like an adult and by that I mean you want to make a meal that is delicious and nutritious instead of spending money on takeout when you have ingredients in the fridge. Yeah, that fun part of adulting.

My go-to lazy vegan meal when I want something warm or when I refuse to let my fresh produce sit too long, is oven roasted vegetables. In fact, this is one of the best parts of veganism. You can grab a few veggies, pop them in the oven and be totally satisfied with this meal. Sure, there are some non-vegans out there who can do this but the number one question I get asked by friends and family is, “Where’s the meat?” and “Is that all?” comes a close second.

Anyway we’re feeling hungry and lazy but you have to put in a little bit of work to feel like you’ve done something and I have just the thing for you: chopping veggies. So grab your favorite kitchen knife and the sturdiest cutting board you have on hand, and let’s get chopping.

What You’ll Need:

*Kitchen Knife
*Cutting board
*Silicon baking pads or parchment paper

Ingredients:

*Cauliflower
*Oyster mushrooms
*Carrots
*Sweet potatoes
*Jerk spice seasoning
*Smoky paprika
*Salt & black pepper
*Garlic granules

Instructions:

*Rinse & chop your veggies into similar sizes so they call cook about the same time. If you want something bigger or smaller than the rest, adjust your cooking time accordingly.

*Place all the veggies on a baking sheet or in an oven-safe baking dish.

*If you’re going oil free, sprinkle the seasoning on top of the veggies and give it a good toss with tongs or your hands. I like to get in there with my hands to make sure everything gets nice and coated, but you do you.

*If you opt out of an oil free vegan recipe, add the oil first to help the seasoning stick.

*Bake in a 200C/400F oven for 30 to 40 minutes, again depending on the size of your veggies. If you can stick it with a fork that comes out easily, you’re good to go.

*Serve and enjoy!

**You can also make a dipping sauce for a lazy vegan meal like this. I’d recommend a vegan yogurt base or maybe even peanut butter or tahini to go with the flavorful veggies. Or you can stay true to your lazy vegan nature and eat as it is. The clean up is simple, your hunger is satisfied and your oven did all the heavy lifting.
