Vegan Chicago-Style Deep Dish Pizza

I’m not sure if you guys know this or not because for the past decade or more I have been in Germany and then Romania, but I am a Chicago girl at heart. It is the city of my heart, the place where I fell in love with big cities and traveling. And though it has been a long time since I’ve been home and taken advantage of all it has to offer, I was recently in the mood for a bit of home.

When you think of Chicago cuisine there are probably just a few dishes that come to mind. Deep dish pizza and Chicago style hot dogs. Since I have never been a fan of hot dogs, I visited my hometown via deep dish pizza which I veganized and–tried–to reduce in, well everything.

It’s important to note that being from Chicago I am a bit of a deep dish pizza (and all pizza) snob. Not all deep dish pizzas are created equally. Some have too much sauce or the sauce is too thick or not seasoned enough, sometimes the crust is too doughy because some people love to go CRAZY with the pizza toppings/fillings.

And since I was making my own vegan deep dish pizza, I decided to address a few of those concerns and improve upon it for us. Also because my husband has only ever had deep dish pizza once in Chicago and I needed to make sure he loved it enough that he would be willing to try this one.

And the next one…

So here is my vegan version of Deep Dish Pizza!

Easy Vegan Dinners ~ Spiced Chickpeas & Rice

We’re all so busy all of the time that we’re often on the lookout for easy vegan recipes, right? I mean, for example I’m committed to the cause, I annoy my friends and family and all that, but some days I want something delicious, vegan and easy. Whether it’s an easy vegan salad or my favorite Easy Vegan Colcannon, sometimes easy is the priority.

Of course, I don’t mean easy like frozen pizza or other vegan junk food that doesn’t quite hit the mark in terms of taste, calorie friendliness or satiety. I mean is this something I will enjoy and not regret when I’m finished eating.

When it comes to this easy plant based vegan recipe, you won’t have any regrets, except that there isn’t enough for seconds. But you can easily double this recipe to make four servings.

So let’s not waste any time and get right into these saucy spiced chickpeas and rice. You can thank me later. 😉

If you want to forego the sauce, simply toss the chickpeas in dry seasoning and pop them in the air fryer or the oven. Otherwise, keep reading to get the recipe.

Vegan Junk Food ~ Vegan Animal Fries

Sometimes you have to take a break from your healthy eating regimen and just go a little big garbage-y. Right?

I’m not really a person that subscribes to so-called cheat days, at least I try not to be, but if I’m having a craving for something then I’ll just go with it–in moderation–and eat something better for the next meal or the next day. But my go-to hack for vegan junk food is to keep the portion sizes adequate and that seems to work for me.

I’d rather finish my plate and want more than push away from the table in regret.

But that’s just me.

So when The Husband requested Animal Fries for dinner the other night, I had a pretty good idea of what I wanted to do, I just had to be very careful how I weighed everything out so we could get enough of everything to make it proper vegan animal fries without going overboard. The last time I made Beyond Animal Fries, they were incredibly delicious but also packed with calories and fat and just…junk.

So I added more ingredients but in a lesser quantity. Intrigued?

My Vegan Junk Food Haul

I’ve made no secret on this blog about my attempt to eat healthier. I started a vegan lifestyle in May 2017 and since then I’ve lost more than 45kg, I have increased my muscle mass and have almost no jiggly skin remaining. Yay me.

But I’m not telling you this just to brag or clap myself on the back, I’m telling you because I have worked really hard to maintain a healthy diet at all times without going overboard. But, a person with more than 45 kilograms to lose has a clear love and/or addiction to food, right?

Soooo right.

But that doesn’t mean that I don’t enjoy a little bit of junk every once in a while. And whenever there are new vegan products that hit the market, I try them out to see if they’re worth breaking the calorie bank. Newsflash: They usually aren’t.

But let’s dig in and see, shall we?

Before I get into my vegan junk food haul, let me tell you a little bit about the healthy things I do to keep the weight off and stay healthy & fit.
