Low Calorie Vegan Recipe ~ Tofu w/Roasted Onions & Mushrooms

Hey there, party people! I hope you’re week is of too a good start. I spent the day running errands, but it started with a double espresso so I’m mostly smiles right now. 🙂

Life has been…busy lately and I am not complaining. Okay, well I’m complaining a little bit, but that’s kind of my thing and I don’t mean anything by it. So yeah, last year I lost one of my regular clients and my first instinct was to panic and scramble to replace them, but I took a beat and decided to take this chance to improve my author career, which has been amazing and so fun but also busy.

Really, really busy.

Why am I oversharing like this? Well, because I rarely have anything in the house to eat that isn’t just ingredients.

I’ve been going through the final, final round of edits for One Night in Paris (available for pre-order) and as such, time often gets away from me despite copious timers and reminders. That means sometimes I need to get creative, which is always a treat for me.

This low calorie vegan recipe is easy to make, delicious, and can be seasoned to fit whatever cuisine you’re into at the moment. If you don’t count herbs & spices, this is just a three ingredient vegan meal that pretty much anyone with an oven can make.

Even if you’re not counting calories, you will love this easy vegan meal, emphasis on easy.

Kitchen Tools:

*Baking sheets
*Plastic container (with lid)
*Cutting board
*Kitchen knife

Ingredients:

*Firm tofu
*Onions, sliced
*Oyster mushrooms
*Soy sauce
*Turmeric, cumin, paprika, salt & pepper
*Sesame oil (optional)
*Hot sauce

Directions:

*Chop tofu and place in a plastic container with a lid. Add desired seasoning to the tofu, including soy sauce. When everything is added, cover it and give a good shake. Set aside.

*Preheat oven to 200C/375F

*Slice or tear oyster mushrooms by hand. Season and use your hands to rub the seasonings all over the mushrooms until they’re well coated. Place in one layer on a baking sheet.

*Slice and season onions and place on the same baking sheet as the firm tofu.

*Place the mushrooms in the oven first, giving them about 15 minutes to cook on their own before you add the tray with the tofu and onions. Cook another 15 to 20 minutes or until the onions are slightly caramelized and the tofu is crispy on the outside and soft in the middle.

*Serve as is, or create a yogurt or soy sauce based sauce. The choice is yours.
