Today I’m going to be doing something a little different. Instead of one vegan recipe, I’m going to show you all the things I did with one big ass squash!
And because there were so many desserts, I have to share with you a photo of the (likely) last outdoor tennis session of the year! I’m going to miss playing so regularly but there’s an indoor tennis court so maybe this isn’t the end, just no more clay or sunshine.

Butternut squash is usually my go-to squash because it’s big and sweet and so versatile. And best of all? It makes so many really good vegan dessert recipes. And this particular butternut squash was so big that I had to get creative, and even gifted a few cakes to my in-laws and other family members.
And I got these really cute cake/bread molds and this gave me the perfect opportunity to use them!
Note: these molds mean a little longer bake-time so be sure to reduce the heat by 5 to 10 degrees and increase the bake time by 5 to 10 minutes.
Vegan Squash Desserts
Squash can be used very similar to pumpkin so feel free to use them interchangeably for both sweet and savory vegan dishes.
Some flavors that work well with butternut squash desserts include: cinnamon, nutmeg, allspice, cloves, ginger, vanilla, orange and even chocolate.

This is a simple butternut squash with pumpkin spices blended in and a maple-cinnamon glaze on top. It was simple and delicious.


This was the ultimate vegan fall recipe: butternut squash, apples, cinnamon and nutmeg. I would’ve added nuts to this but I didn’t think it needed the extra calories, however feel free to add pecans or walnuts to this to this amazing combination.


This one was probably my favorite so far. Biscotti Pumpkin Tiramisu. I decided against dipping the cookies in coffee and I used vegan mascarpone, mixing it with sugar and butternut squash and vanilla extract. Like any good tiramisu, this one only gets better with each day it spends in the fridge. It was so, so good.
And a calorie bomb, so eater beware!
And that’s it, taking one butternut squash and turning it into several. I made the apple and the pumpkin spice bread times two and handed them out to loved ones, just to give you an idea of how big the squash was…totally should’ve remembered to take a photo of it but, alas, I didn’t.
