It’s not summer…yet, but that doesn’t mean it’s not the perfect time to get in the summer salad MOOD!
This is the time where you can start to throw a handful of fruit into your salad with supreme satisfaction that it is the absolute right choice. Tomatoes, especially heirloom tomatoes are out in full force, vibrant and juicy and full of flavor.

Now, I’m not going to lie and pretend that this vegan summer salad recipe didn’t have me casting sideways glances at the recipe creator…because it did. It totally did. I mean, sure corn and blueberries are both sweet and delicious, but would they remain so when put in the same bowl? On the same fork?
Turns out…yep.
I was a skeptic going into this recipe but I couldn’t deny just how tasty it sounded and looked. I mean deep blue berries and bright yellow corn? Sign me up…twice.

Another good thing about this salad? It is super easy to make. All you need is a cutting board, kitchen knife, and a big ol’ mixing bowl to toss it all in. Okay, so maybe you need salad tongs too!
So, let’s see if I turn you onto the world where blueberries and corn are fun, if strange, bedfellows…bowlfellows?
Kitchen Tools:
*Kitchen knife
*Cutting board
*Mixing bowl
*Salad tongs
*Whisk
Ingredients:
*Blueberries
*Corn on the cob
*Vegan feta cheese
*Apple
*Shallot
*Mint
*Lemon or lime juice
*Dried cranberries
*Green chili pepper
*Vegan yogurt
*Vegan sausage
*Agave syrup

Instructions:
*Preheat oven to 185C/355F
*Place sausage on a baking sheet and cook 5 to 7 minutes on each side until crisp and brown, let cool before slicing.
*Bring a large pot of salted water to a boil and add corn (peel & shuck first), boil for 8 to 10 minutes. When the corn cools, cut the corn off the cob.
*Thinly slice shallots, chili pepper & mint and add to mixing bowl.

*Toss in blueberries, dried cranberries, and chopped apple (peeled or unpeeled, the choice is yours) and diced or crumbled vegan feta cheese.
*Whisk together vegan yogurt, lemon/lime juice & agave syrup.
*Place the remaining ingredients into the mixing bowl and add yogurt mix. Toss until fully combined. Serve.
