Lentil Tofu Recipe

Lentil tofu, that’s right. Lofu, if you will? I’m still working on the name but since my hubs is the one who made this and has been calling it Lentil-fu, that’s what we’re calling it in Cronometer.

Why take the time to turn lentils into tofu, you ask?

The simple answer is, why not? The more complicated answer is that using lentils as tofu adds a grain element so that when you try to recreate your favorite non-vegan dishes you’re not just eating traditional tofu 3 different ways on the same plate.

One of the best examples of this, which you’ve probably even seen on this blog, English Breakfast. You have tofu eggs, tofu-based sausage or bacon and if you’re really going all out, tofu ham! There’s nothing wrong with it but I work out regularly and I’m trying to get more protein in my diet but that just seems…excessive.

So a few weeks ago I sent an IG video of one of my favorite vegan creators to him–because even though we live together we often share social media with each other like this–and then I forgot about until he asked if we have lentils.

Ha! This is a vegan household of course we have lentils!

And from there, an obsession was born.

This lentil tofu recipe is easy to make but I will warn you now that it does take a bit of prep work. It’s also delicious and you can really season it so in a pinch you can air fry it, skillet fry it or bake it without a lot of hassle.

How To Make Lentil Tofu

Rinse your lentils and then soak them overnight.

Drain the lentils and rinse again.

Grab your blender and add fresh water and and lentils, using a 2:1 ratio by volume, so 1 cup of lentils to 2 cups of water. Blend until smooth.

Cook in a skillet over medium heat until thick and sticky.

Place in a storage container with an airtight lid and let sit in the fridge overnight, or until set.

Use however you want.

*Note: this works well with red, green, yellow, brown and even black lentils.

What To Make With It?

Since this lentil-fu (beanfu?) recipe was all my hubs, I’ll show you what he did with it.

Pesto Pizza

In this recipe, the lentil tofu is seasoned and cooked like diced bacon, crispy and slightly sweet with a healthy serving of smoky paprika. Added with the pesto pizza, it’s a yummy weeknight vegan dinner.

Vegan Breakfast

The vegan sausages are made from pea protein, the lentil-fu bacon and mini corn biscuits. Yeah, I know there are technically two grains here with the cornmeal and the lentils, but he made this not me and guess what? Delicioso!

Vegan Loin Strips & Polenta

This one uses a dash of agave syrup, hot sauce and grill seasoning for the lentil-fu to create a simple yet hearty vegan dinner.

Vegan Chix & Rice

This is another easy vegan weeknight dinner recipe. You need a protein and you need a grain, and if you had a big salad for lunch like I did, this is all you need. Season with salt, black pepper, garlic, cumin & turmeric. Crisp up in the air fryer or simply pop it in the oven for 10 minutes.
