Greetings, my favorite vegans!
How are you this Monday? I’ve been busy editing…and cold. All winter it’s been pretty mild until last week when the temperatures dipped below zero (Celsius) which was fine. Mostly. And then last night a few snowflakes began to drift down from the sky and apparently they didn’t stop because this is what I woke up to this morning.

So that’s what’s up with me.
And because of the aforementioned busy-ness, I’ve been keeping my vegan recipes still tasty & nutritious but also simple. Sometimes simplicity is key and even though this vegan recipe has quite a few ingredients, it’s still relatively easy.
My Hubs calls this the ‘Vegan’s Kitchen Sink’ because, well because there are plenty of ingredients in this baby!
I started with oyster mushrooms because let’s be honest, I can’t get enough of’em! And I knew I wanted to have rice so that’s where i moved to next.

From there I just had to figure out other vegetables and a sufficient amount of protein and then…voila a fully formed vegan casserole.
Do you have a go-to vegan casserole when you’re lazy or just really hungry and trying to use up some ingredient before they go bad? Am I telling on myself? Hahahahaha!
On to the recipe.
Kitchen Tools:
*Cutting board
*Kitchen knife
*Glass casserole dish (ovensafe)
*Serving spoon
Ingredients:

Instructions:
*Cook the rice according to the package instructions.
*Preheat oven to 200C/400F.
*Tear and season mushrooms with 7 Spices and place on a baking mat. Cook for 15 to 20 minutes, until brown and slightly crisp. Let cool.
*Heat a pot over medium heat, adding water or broth, or oil if you’re not into oil free vegan recipes. Add in onion, bell pepper and leek. Season with salt, black pepper and 7 Spice. Cook 3 to 5 minutes until they started to break down.

*Stir in garlic, vegan mince and spinach. I used frozen spinach because it’s perfectly portioned and easy to add to pretty much anything. Cook another few minutes and then add shelled edamame beans.
*Season more if needed and then toss everything together and place in baking dish. This step is totally optional and only meant to warm everything up again and let all the flavors blend together perfectly.

*Bake for 10 to 15 minutes on 185C/350F.
*Serve. We had a small side salad just to get some fresh veggies in our bodies.
