Happy Monday, food lovers! Did you have a good weekend?
I did, thanks (if you asked!). I spent time writing, marketing and editing because it’s really cold outside and I just felt like staying inside.
Also, I made peanut butter cookies because I was really in the mood. They were delish but there’s no reason to post them since there are a few peanut butter cookie recipes here already. They were, and are, still very delicious.

But we’re not here to talk about vegan cookie recipes, oh no. Today I have something even better: gingerbread!
Not regular ol’ ginger bread with cookie cutters and resting dough. Nope, this is the essence of gingerbread but with more variety and more moisture.
I’ve spent this winter upping my baking game because I really love giving people a sweet treat, especially when it’s something they haven’t had before or wouldn’t make for themselves. Here in Romania, that’s a common thing since we’re from different countries and cultures, but most things have been a hit.

Including these gingerbread flavored desserts.
Gather your kitchen tools and your ingredients and let’s get some vegan baked goods in the oven!
Kitchen Tools:
*Large mixing bowl
*Silicon spatula
*Decorative bread molds
*Cake pans
Ingredients:
*Flour
*Brown sugar
*Baking soda
*Ground ginger
*Ground allspice
*Ground nutmeg
*Ground cinnamon
*Vanilla extract
*Butternut squash
*Oil (neutral)
*Molasses
*Almond milk (unsweetened)
*Apple cider vinegar

Directions:
*Preheat oven 180°C/350°F – Grease baking dish (I used a decorative loaf pan but you can make a 9×13 or a two layer 7 or 8 inch.
*Add dry ingredients together into a large mixing bowl and combine.
*Add wet ingredients into the same bowl and stir (by hand) until just blended. You can use a whisk but I always find a fork or spatula works best for me. Do not overmix.

*Bake 20 to 30 minutes for a 2 layer cake. The loaf pan took about 35 to 40 minutes and the donuts took about 5 to 8 minutes, but closer to the shorter side. As always, do the toothpick check to make sure the vegan yummies are done.
*Let cool and frost or glaze however you want.
