Today’s post is going to be really short because I don’t usually do Friday posts but last weekend I went to a family cookout and I made my famous vegan peanut butter bars. Okay, they’re only famous within my husband’s family because they are super delicious and everyone can’t believe they’re vegan!
It’s all part of my wicked little plan.
These peanut butter bars are the perfect vegan dessert for any occasion because they are:
*Easy to make
*Delicious
*Guaranteed to impress

People will just keep eating them, and eating them. And eating them.

Kitchen Tools:
*Glass baking dish (8×8 or 8×13)
*Rubber spatula
*Sauce pan
*Food processor
*Mixing bowl
Ingredients:
*Peanut butter
*Biscuits (disgetiv crackers like Le Petit Beurre)
*Confectioner’s sugar (powdered)
*Vegan chocolate
*Vegan butter (melted)
*Vanilla and/or rum extract
Instructions:
*Add biscuit to a food processor and break up until small and crumbly.
*Dump biscuits into a large mixing bowl and then add melted vegan butter and all but 2 tablespoons of peanut butter. Mix well with rubber spatula until combined.
*Turn the mixing bowl over into the glass baking dish. Line the dish with parchment paper so that it’s easier to pull it out and cut before serving.

*Melt the chocolate in the same sauce pan you melted the vegan butter in, and add the last of the peanut butter. Stir well.
*Pour the chocolate mixture over the top in an even layer. Smooth with the spatula and then refrigerate at least two hours or over night.
*Remove from fridge about 10 to 15 minutes before serving and cut into squares.
Keep in mind that the chocolate will melt if it’s too hot so if you don’t plan on eating them all at once, keep it in the fridge between servings.
