Vegan Banana Nutter Cookies

Happy Friday, friends!

Since the weekend is upon us, I think we all deserve a treat for making it through another week of work, people and anything else that stresses you out! Even if you were super productive and made it through the week with a big ol’ smile, I know you’re happy its Friday so let’s celebrate.

Why?

Well honestly because I have these incredible vegan banana nutter cookies that I want to share with you. I know, I know…But I thought you said you didn’t like sweets!

I don’t, not really. But I do love making them.

I love the way Cos’ face lights up when he sees that I’ve made a new dessert.

Yes, I used my holiday cookie platter!!!

I love it when my in-laws moan and groan over my delicious vegan sweet treats. Let this be a lesson to you vegans out there, if you want to win over hearts & minds, start with desserts. It’s a surefire win. Every. Single. Time.

What the heck is banana nutter?

Yeah, caught that, did you?

So I decided to try a thing with these vegan cookies. You know how butter is the main fat in cookies? Well I wondered if you could replace it with other butters like peanut or cashew butter. I did a little bit of Googling, I’ll admit, but there wasn’t a clear answer so I just went for it.

Guess what? It works. Okay, so I mixed half peanut butter and half butter but it still worked beautifully!

Feel free to add nuts or vegan chocolate chips, but I think these vegan cookies were pretty great on their own.

Kitchen Tools:

*Mixing bowl
*Hand mixer
*Baking sheets or parchment paper
*Kitchen scale

Ingredients:

*250g Whole wheat flour
*170g Brown sugar
*300g Banana (overripe & soft)
*6g Baking soda
*56g Vegan butter
*56g Peanut butter
*55g Walnuts (optional)

Instructions:

*Mix dry ingredients in a large mixing bowl

*In another mixing bowl, combine butter, peanut butter and banana with a hand mixer until well blended.

*Add to dry ingredients and stir manually (spatula or wooden spoon).

*Fold in walnut (or chocolate chips) and drop onto a baking sheet.

This vegan cookie recipe made 24 cookies for me.
