Vegan Lemon Cookies Recipe

Hey there, vegan cookie lovers!

If you’re in the mood for a sweet treat, and you like your sweet with a hint of tangy, you will love these delightful Vegan Lemon Cookies. They’re soft, (vegan) buttery, and bursting with fresh lemon flavor—perfect for brightening up your day or surprising your sweets-lovin’-husband with a treat after he returns from a day of solo errands!

You all know I’m not big on sweets but once in a while I’ll partake and I did enjoy 2 of these cookies because they weren’t too sweet and they were just the right amount of lemony.

Kitchen Tools

*Mixing bowl
*Hand or Stand mixer

What You’ll Need

*Vegan butter (room temperature)
*Brown sugar (or cane if that’s your jam)
*Lemon zest & juice
*Flour
*Salt
*Baking soda
*Lemon extract
*Almond milk (or any plant milk, unsweetened)

Let’s Get Baking!

*Preheat oven to 175°C (350°F) and line two baking sheets with parchment paper.

*Cream together the vegan butter and granulated sugar in a stand mixer or using an electric hand mixer until the mixture is light and fluffy. This usually takes about 2 to 3 minutes. Make sure you stop once to scrape down the sides of the bowl so everything gets mixed evenly.

*Add in the lemon extract & lemon juice, and mix until well combined.

*In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients in your mixing bowl, using a wooden spoon or spatula. Mix until everything is just combined; it’s important not to overmix here to keep those cookies tender.

*Now comes the fun part—add in the lemon zest! This is where you’ll get that bright burst of flavor that makes these cookies so special.

*Pour in the almond milk and give it another quick stir until a dough forms. It might seem a bit crumbly at first, but don’t worry; it will come together beautifully.

* Once the dough is ready, scoop out tablespoon-sized portions and roll them into balls.

*Place them on the prepared baking sheets about 2 inches apart.

*Bake for about 10-12 minutes or until they’re lightly golden around the edges. They might look a bit soft in the middle, but they’ll firm up as they cool.

If you’re feeling fancy (I wasn’t and I didn’t), whip up that optional glaze while the cookies are cooling. Simply mix together the powdered sugar and lemon juice until smooth. Drizzle it over your cooled cookies for an extra zing!
