I don’t talk about myself, at least not in a lot of specifics, but one thing you might not know about me is that both of my grannies hail from the south of the United States. That means that I grew up eating a lot of southern cuisine, also known as “soul food” for the uninitiated. Cornbread and collard greens, green beans & potatoes, mac & cheese, all of it was staples of my childhood.
One of the things that was present every Sunday, every holiday was a peach cobbler. Sure there was also caramel cake, sweet potato pie and something chocolate depending on the holiday, but you could always count on the peach cobbler. Always.
Typically when my hubs wants a peach-y dessert, I’ll go for a crimble crumble (Friday Night Dinners fans, you know what I’m talking about!). It’s easier and just as delicious but recently the Hubs asked specifically for a cobbler and he even grabbed the peaches to make sure it happened.

And since this is our 20th year, it’s not like I could refuse. Right?
Okay, I totally could have but just because I’m not a big fan of sweets doesn’t mean that I don’t enjoy making them and watching friends & family fawn over them.
So I reached way back in my memory machine and pulled out the peach cobbler recipe from my childhood, only a smidge healthier.
What’s that mean? Well I decreased the sugar and vegan butter, and did what I could to make it not a heart attack on a plate. I didn’t eliminate the butter altogether, but I did take it down a few notches when I placed it in the bottom of a casserole dish. I didn’t add multiple cups of brown (not white) sugar to the cobbler batter or the peaches. It’s recognizable as the dish you love but when it hits your tongue there are no heart palpitations and no sweats, so trust me when I tell you it was better.

The dough was bouncy and sweet, but not overly so and The Romanian loved it so much that he refused to share it with the family. I take it as the highest compliment but since holiday season is upon us, I’ll make it again so that everyone can enjoy it.
